Garlic Oven Fries

1 Heat oven to 500°. Spray 15x10x1-inch pan with cooking spray
- 4 medium red potatoes (2 1/2 to 3 inch), each cut in 8 wedges
- 2 teaspoons olive or vegetable oil
- 1 teaspoon dried basil leaves
- 1 teaspoon garlic salt
Roast Pork Shoulder (Perníl)

Wash the pork shoulder. With a sharp knife, make 1-inch deep cuts into the pork
- 8 pounds picnic pork shoulder
- 12 minced garlic cloves
- 1 1/2 teaspoons black pepper
- 1 1/2 teaspoons dried oregano
- 3 tablespoons Olive Oil
- 3 tablespoons white vinegar
- 8 teaspoons salt (or 1 teaspoon of salt per pound of meat)
Jerk Chicken Casserole

Heat oven to 375°. Spray 8-inch square (2-quart) baking dish with cooking spray
- 1 1/4 teaspoons salt
- 1/2 teaspoon pumpkin pie spice
- 3/4 teaspoon ground allspice
- 3/4 teaspoon dried thyme leaves
- 1/4 teaspoon ground red pepper (cayenne)
- 6 boneless skinless chicken thighs
- 1 tablespoon vegetable oil
- 1 can (15 oz) Progresso® black beans, drained, rinsed
- 1 large sweet potato (1 lb), peeled, cubed (3 cups)
- 1/4 cup honey
- 1/4 cup lime juice
- 2 teaspoons cornstarch
- 2 tablespoons sliced green onions (2 medium)
Meatballs with Salsa Verde

Pour into saucepan large enough to hold meatballs salsa Verde, onion garlic and Chipotles
- For the Sauce:
- 3/4 lb. lean ground beef
- 3/4 lb. lean ground pork
- Adobo with Pepper, to taste
- 1 cup dried bread crumbs soaked in 4 tbsp. milk
- 2 eggs Slightly beaten
- 1/2 cup finely chopped onion
- 1 tbsp. finely chopped fresh mint
- 1/2 cup finely chopped cilantro
- 1 tsp. Dried Oregano
- 2 tbsp. finely chopped cilantro to sprinkle
- 1 can Salsa Verde
- 1 cup finely chopped white onion
- 3 cloves fresh garlic, minced
- 2 Chipotle Chiles with some sauce from 7 oz can Chipotle Peppers in Adobo Sauce
- 1 packet Powdered Beef Bouillon dissolved in 1 cup water
- Adobo with Pepper , to taste

- 1 teaspoon ground cinnamon

Crock Pot Honey Garlic Chicken

Arrange chicken thighs on the bottom of your slow cooker; set aside
- 6 boneless , skinless chicken thighs*
- 4 garlic cloves , minced
- 1/3 cup honey
- 1/2 cup low sodium ketchup
- 1/2 cup low sodium soy sauce
- 1/2 teaspoon dried oregano
- 2 tablespoons fresh parsley
- 1/2 tablespoon toasted sesame seeds
Honey Bran Muffins

In large bowl, combine cereal, oil and raisins; pour boiling water over this mixture
- 2 1/4 cups flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt, if desired

5 Star Chili

1. Heat large stock pot over medium-high heat
- 2 pounds ground beef chuck
- 1 pound bulk Italian sausage
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 2 (28 ounce) cans diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 2 green chile peppers, seeded and chopped
- 1 tablespoon bacon bits
- 4 cubes beef bouillon
- 1/2 cup beer
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 2 teaspoons hot pepper sauce (e.g. Tabasco™)
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper

- 1 teaspoon white sugar
- 1 (10.5 ounce) bag corn chips such as Fritos®

Amazing Pumpkin Pie Cake

1.) Beat all ingredients together except cake mix
- 29 oz. can of pumpkin
- 4 eggs
- 1 (13 oz.) can evaporated milk
- 1-1/2 cup sugar
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1 pkg. yellow cake mix (spice or white flavored cake mix works well, too)
- 1 cup melted butter or margarine
- 1 cup chopped nuts (optional)
