Chocolate Chip Banana Bread

Preheat oven to 325 degrees F
- 1/3 cup canola oil
- 1 cup sugar
- 3 eggs, beaten
- 2/3 cup buttermilk
- 4 to 5 bananas, mashed
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts, optional

In large microwavable bowl, place cereals, pretzels and peanuts; set aside
- 4 cups Lucky Charms® cereal
- 2 cups Corn Chex® cereal
- 1 1/2 cups broken mini-pretzel twists (about 65 twists)
- 1 cup dry-roasted peanuts
- 1/2 cup packed brown sugar
- 1/4 cup butter
- 2 tablespoons corn syrup
- 1/8 teaspoon baking soda
- 1/4 cup green mini candy-coated milk chocolate candies

Melt butter in a skillet over medium heat
- 1 T. butter

- 1 (14 1/2 ounce) can whole tomatoes, finely chopped, drained and 1/4 c. juice reserved

- 2/3 c. whipping cream
- 1 (8 ounce) pkg. penne rigate pasta, cooked
- 2 T. grated Parmesan cheese, for garnish

Ground Beef Stew

In skillet, cook beef over medium heat until no longer pink; drain well
- 1 pound ground beef
- 6 medium potatoes, peeled and cubed
- 1 package baby carrots
- 3 cups water
- 1 envelope dry onion soup mix
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 to 1-1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 can (10-3/4 ounces) condensed tomato soup, undiluted
- 1 can (6 ounces) Italian tomato paste

- 1 gallon water
- 4 green plantains

- 1 white onion cut 1/4" dice

- 2 chipotles chopped
