Slow Cooker Potato Soup

In crockpot, combine everything except for cream cheese
- 1 (30oz) bag frozen shredded hash browns
- 3 (14.5oz) cans chicken broth
- 1 can cream of chicken soup
- 2 Tbsp minced onion flakes
- 1 tsp pepper
- 1 tsp salt
- 1 (8oz) package cream cheese (I used light)
Grandma's Coconut Cake

Place a rack in the center of the oven and preheat the oven to 350°F
- Cake:
- Solid vegetable shortening for greasing the pans
- Flour for dusting the pans
- 1 package plain white cake mix -- (18.25 ounces)
- 1 1/3 cups water
- 2 tablespoons vegetable oil -- such as canola, corn, safflower, soybean, or sunflower
- 3 large eggs
- Coconut frosting:
- 2 cups sugar
- 2 cups sour cream
- 1 package (12 ounces, 3 1/2 cups) frozen unsweetened grated coconut, thawed
Strawberry Yogurt Pops

Put strawberries in blender
- 1-2 cups fresh strawberries...washed and stems removed
- 1 cup plain nonfat Greek yogurt {lots of protein}
- 1/2 c Truvia {more or less to taste} you can also use sugar or your favorite sweetener of choice
- 1-2 teaspoons of pure vanilla
- 1-2 teaspoons lemon juice
Summertime Slaw

In large saucepan, combine sugar, vinegar, oil, water, salt, pepper and pepper flakes if desired
- 3/4 cup sugar
- 3/4 cup white vinegar
- 1/3 cup canola oil
- 1 tablespoon water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon crushed red pepper flakes, optional
- 1 package (14 ounces) coleslaw mix
- 2 medium tomatoes, peeled, seeded and chopped
- 1 large onion, chopped
- 1 small green pepper, chopped
- 1 small sweet red pepper, chopped
- 1/2 cup sweet pickle relish
Lemon, Lime & Orange Tart

Place oven rack in middle position
- CRUST
- 33 shortbread cookies (such as Lorna Doone)
- 1 cup sweetened shredded coconut
- 1 Tbsp grated orange peel
- 1 large egg
- FILLING
- 3/4 cup plus 1 tsp sugar
- 11/2 Tbsp cornstarch
- 4 large eggs
- 1/2 stick (1/4 cup) butter, very soft
- 1 tub (8 oz) reduced-fat sour cream
- 1 Tbsp each grated lemon, lime and orange peel
- 1/3 cup orange juice
- 3 Tbsp each lemon and lime juice
- Garnish: shaved fresh coconut
Slow-Cooker Triple Chocolate Brownies

Lightly coat 5-quart slow-cooker insert with cooking spray
- Nonstick cooking spray
- 1 1/4 cups all-purpose flour (spooned and leveled)
- 1/4 cup unsweetened cocoa powder
- 3/4 teaspoon baking powder
- 1/2 teaspoon coarse salt
- 1/2 cup (1 stick) unsalted butter, cut into pieces
- 8 ounces bittersweet chocolate, chopped
- 1 cup sugar
- 3 large eggs, lightly beaten
- 1 cup walnut halves, coarsely chopped
- 1 cup semisweet chocolate chips (6 ounces)
Chipotle Chicken Drummettes

1. Heat oven to 375°F. Line 13x9-inch pan with foil
- 2 packages (16 oz each) chicken wing drummettes (about 20 drummettes)
- 3/4 cup chili sauce
- 3 tablespoons packed brown sugar
- 2 tablespoons chopped chipotle chiles

CUBANO SANDWICH

- 1 med clove garlic
- 1/2 t Kosher salt
- 1 T olive oil
- 1 T fresh lime juice
- 1 T chopped fresh cilantro
