Chicken Pot Pie With Savory Crumble Topping

CHICKEN: Bring chicken and broth to simmer in covered
- FILLING:
- 1 1⁄2 lbs boneless skinless chicken breasts (and or or thighs)
- 3 cups low sodium chicken broth
- 2 tablespoons vegetable oil
- 1 medium onion, chopped fine (about 1 cup)
- 3 medium carrots, peeled and cut crosswise into 1/4-inch-thick
- 2 small celery ribs (chopped fine, about 1/2 cup)
- table salt & fresh ground pepper
- 10 ounces cremini mushrooms, stems trimmed, caps wiped clean and sliced thin
- 1 teaspoon soy sauce (see note)
- 1 teaspoon tomato paste (see note)
- 4 tablespoons unsalted butter
- 1 ⁄2 cup unbleached all-purpose flour
- 1 cup whole milk
- 1 teaspoon juice lemon
- 3 tablespoons minced fresh parsley leaves
- 3 ⁄4 cup frozen baby peas
- TOPPING:
- 2 cups unbleached all-purpose flour
- 2 teaspoons baking powder
- 3 ⁄4 teaspoon table salt
- 1 ⁄2 teaspoon ground black pepper
- 1 ⁄8 teaspoon cayenne pepper
- 6 tablespoons unsalted butter, cut into 1/2-inch cubes and chilled

In a large bowl, cream butter and sugars until light and fluffy
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1-1/2 cups quick-cooking oats
- 1 cup flaked coconut
- 5 milk chocolate candy bars (1.55 ounces each)

- 1 broiler/fryer chicken, cut into 8 pieces
- 2 cups low fat buttermilk

Lightly dredge chicken in seasoned flour
- 1 (3- to 4-pound) chicken, cut into 8 pieces
- All-purpose flour, seasoned with salt, pepper, and paprika, for dredging
- 3 tablespoons butter
- 3 tablespoons vegetable oil
- 1/2 cup chopped onion
- 2 cans (15-1/2 ounces each) black-eyed peas, undrained
- 1/2 cup chicken broth
- 1/2 teaspoon dried oregano, tarragon, or thyme
- 1 medium-sized fresh tomato, chopped
Gandule Rice

Preheat oven to 400 degrees F
- 4 1/2 cups white rice
- 3 3/4 cups water
- 1 8 oz can tomato sauce
- 1 can (+liquid) Gandule Peas (Pidgeon Peas)

- 5 to 6 chicken thighs, sliced thin (or meat of your preference)

- 1 teaspoon vanilla

- 2 lb large or medium-sized shrimp frozen, cooked, ready to eat-slightly thawed
