Creamy Chicken Dijon

To make sauce: mix mayonnaise, yogurt, mustard, and honey to make the sauce
- 3 tablespoons light mayonnaise
- 2 tablespoons fat-free plain yogurt
- 2 teaspoons Dijon mustard
- 1 teaspoon honey or the equivalent in artificial sweetener
- 1 pound skinless, boneless chicken breasts
- 1 teaspoon dried parsley
Hearty Spinach Soup

In a Dutch oven, heat oil over medium heat
- 1 T. olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8-oz. pkg. shiitake mushrooms, stems removed and caps thinly sliced
- 6 c. low-sodium vegetable or chicken broth
- 1/2 t. dried rosemary
- 15-oz. can garbanzo beans, drained and rinsed
- 2 c. cooked brown rice
- 2 5-oz. pkgs. baby spinach
- coarse salt and pepper to taste
- Garnish: shredded Parmesan cheese

1. Drain and rinse 1 can of the beans
- 2 (15-ounce) cans reduced-sodium black beans
- 1 (14.5-ounce) can reduced-sodium chicken broth
- 3/4 cup prepared salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Fresh cilantro and reduced fat shredded cheddar cheese for garnish, optional

Sesame Chicken Wings

- 36 chicken legs & wings
- 2 teaspoons ground coriander
- 3 tablespoons soy sauce
- 2 cloves garlic
- 3 tablespoons fresh lemon juice
- 1 inch fresh ginger -- peeled
- 2 tablespoons sesame oil
- 1 onion -- quartered
- 2 tablespoons sugar
- 1 teaspoon red pepper flakes
- 1/2 cup sesame seeds (approx.)
- 2 teaspoons salt
Pork Tenderloin Beer Teriyaki Marinade
