Marshmallow Melties

1 Spray bottom and sides of 13x9-inch pan with cooking spray
- 3 tablespoons butter or margarine
- 1 bag (10.5 oz) miniature marshmallows (5 1/2 cups)
- 5 cups Cheerios® cereal
Mini Almond Joy Brownies

Make the brownies: Preheat oven to 350 degrees
- For the brownies:
- 1/4 c. butter (plus more for greasing the muffin tins)
- 1/4 c. coconut oil (can use all butter, but the coconut oil flavor is good with the topping)
- 1 c. + 2 Tb. sugar
- 2 lg. eggs
- 2/3 c. cocoa powder
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1/2 tsp. espresso powder (optional- enhances the chocolate flavor)
- 1-1/2 tsp. vanilla
- 3/4 c. flour (I used whole wheat pastry with good results)
- 1 c. chocolate chips
- For the filling:
- 2 c. unsweetened coconut
- 1/2 can sweetened condensed milk (sorry- I dislike recipes that use half of things but there’s no getting around it…unless you make a double batch!)
- 36 whole almonds
- For the ganache:
- 3/4 c. bittersweet chocolate
- 1/3 c. butter
- 2 tsp. honey
Brown Sugar & Rum Pound Cake

Preheat oven to 325 degrees
- 1-1/2 cups Purity unsalted butter, softened
- 1 (16-ounce) package light brown sugar
- 1 cup granulated sugar
- 5 large eggs
- 3/4 cup Mayfield milk
- 1/4 cup Prichard's rum
- 3 cups White Lily all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped pecans, toasted
No-Cholesterol Carrot Cake

1 Heat oven to 350° (325° for dark or nonstick pan)
- 3 cups freshly shredded carrots (4 to 5 large)
- 1/2 cup raisins
- 1 box yellow cake mix
- 2 teaspoons ground cinnamon
- 3/4 cup water
- 3/4 cup fat-free egg product
- 1/3 cup applesauce
- 1/3 cup vegetable oil
- 1 container cream cheese frosting
- 2 drops red food color
- 1 drop yellow food color
- 2 drops green food color
Cheesy Beef Taco

Mix ground beef, hot water,milk, rice, and stewed or diced canned tomatoes
- Sauce packet:
- 1 pound ground beef
- 2 1/4 cups hot water
- 1/2 cup milk
- 1 cup rice
- 1 cup stewed or diced canned tomatoes
- 1 tablespoon corn starch
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 1/2 cups cheddar cheese, divided
- 1 cup corn chips
Dagwood Burgers

- 2 lbs. lean ground beef
- 1 lb. Italian ground pork sausage
- 2 c. dry bread crumbs
- 1 onion, chopped
- 1/2 c. barbecue sauce
- 1 egg, beaten
- 1.35-oz. pkg. onion soup mix
- 1 t. jalapeño pepper, diced
- salt and pepper to taste

- Frosting:
- 1 box devil's food cake mix
- 1/2 cup butter or margarine, softened
- 1 egg
- 2 tablespoons milk
- 1 cup peanut butter chips
- 1 container Rich & Creamy vanilla frosting
- 1/3 cup creamy peanut butter
- 2 tablespoons milk
- 1/4 cup strawberry jelly
Summer Fruit Pizza

In a large bowl, beat cream cheese and sour cream until smooth
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup confectioners' sugar
- 2 tablespoons 2% milk
- 1 tube (16-1/2 ounces) refrigerated sugar cookie dough, softened
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 8 fresh strawberries, sliced
- 3/4 cup apricot preserves
PHILADELPHIA Strawberry Fields No-Bake Cheesecake

- 1/2 cup Kraft Pure Strawberry Jam
- 16 fresh strawberries, chopped
- 3 cups thawed Cool Whip Light Whipped Topping
