APPLE CIDER SWEET POTATO MASH

• Pour apple cider into Microwave Pressure Cooker
- 3 medium to large sweet potatoes, peeled and cubed
- 1 cup apple cider
- 1 tablespoon chopped fresh thyme
- 1/2 cup sour cream
- 2 tablespoons butter
- salt and pepper
Berry Lover's Delight Pie

1 Heat oven to 450°F. Unroll 1 pie crust in ungreased 9-inch glass pie plate
- 1 box refrigerated pie crusts, softened as directed on box
- Powdered sugar for dusting hearts

Super Easy Marinade for Pork Chops

Slip your hand under the rim of a plastic bag and use it to toss meat pieces into the bag
- 2-3 pounds pork chops
- 2 tablespoons vegetable oil
- 3 tablespoons vinegar (whatever kind you like and have on hand)
- Montreal steak spice (to taste)
Brownie Buckeye Cupcakes

Preheat oven to 350°F. Place paper baking cups in each of 12 regular-size muffin cups
- Batter:
- 12-16 miniature peanut butter cups
- 1 box Duncan Hines® Milk Chocolate Premium Brownie Mix
- 3 large eggs
- 1/4 c water
- 1/2 c oil
- Icing:
- 1/2 c creamy peanut butter
- 1/4 c butter, softened
- 2 c powdered sugar, sifted
- 3 tbsp milk
- 1/2 tsp pure vanilla
- 1/8 tsp salt
- Topping:
- 12-14 miniature peanut butter cups
- Ganache:
- 4 oz bittersweet chocolate, chopped into very small pieces
- 1/2 c heavy whipping cream
- 2 tbsp honey
- 2 tbsp light corn syrup
- 2 tbsp vanilla
Half-Baked Sweet Potatoes with Lemon Butter Sauce

- 4 sweet potatoes
- 8 tablespoons (1 stick) butter
- 3 tablespoons lemon juice
- 2 tablespoons finely chopped fresh parsley

In large saucepan, cook potatoes in boiling water 15 to 20 minutes, until fork tender
- 2 pounds red potatoes with skin on, washed (6 to 7 potatoes)
- 1 cup mayonnaise
- 1/8 cup honey
- 1 tablespoon prepared mustard
- 1/4 teaspoon salt
- 1/4 cup sliced scallions (1 to 2 scallions)
- 3 slices cooked bacon, crumbled

- 1/2 cup milk

- 4 skinless, boneless chicken breast halves - pounded thin
- 1 cup oil for frying, or as needed
