Whisk pudding, milk, and vanilla in a medium sized bowl
- 1 box (3.4 oz) vanilla instant pudding
- 1 1/2 cups nonfat milk
- 1 teaspoon vanilla extract
- 25 Golden Oreos (or another vanilla flavored cookie/graham cracker)
- 2 tablespoons unsalted butter, melted
- 1 1/2 containers (8 ounces each) Cool Whip Topping (see note about using fresh whipped cream)
- 1 pound fresh strawberries, hulled and sliced and patted dry

1. Cream sugar and butter together in large mixing bowl until pale
- 1 1/2 cups sugar
- 1/2 stick (4 tablespoons) unsalted butter, room temperature
- 4 large eggs
- 1 tablespoon flour
- 2 tablespoons yellow cornmeal
- Pinch of fine sea salt
- 3/4 cup buttermilk
- Grated zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 1 9-inch pie crust, chilled
Zesty Chicken and Rice Casserole with Roasted Red Peppers

Cook rice in large saucepan as directed on package using chicken broth instead of water and salt
- 2 cups uncooked instant rice
- 1 (14-oz.) can ready-to-serve chicken broth
- 1 (9-oz.) pkg. refrigerated grilled chicken strips
- 1 (7 or 7.25-oz.) jar roasted red bell peppers, chopped
- 1/4 cup halved pitted kalamata olives
- 1/3 cup purchased Italian salad dressing
- 1 oz. (1/4 cup) shredded fresh Parmesan cheese
- 2 tablespoons chopped fresh parsley

1. Toast bread slices. Let cool, then tear into 1-inch chunks
- 6 slices (about 5 oz.) day-old or slightly stale bread (see note above)

- 1/2 teaspoon salt
