Chicken-Pesto Quesadillas

1 For each quesadilla, spread 1 tortilla with 1 tablespoon pesto
- 8 flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package)
- 1/4 cup basil pesto
- 1 cup shredded cooked chicken
- 1 cup packed fresh baby spinach leaves
- 1/2 cup shredded Mexican cheese blend (2 oz)
Savory Beef Stew

In large bowl, combine flour and beef chunks; toss until beef is completely coated
- 1/4 cup all-purpose flour
- 2-1/2 to 3 pounds boneless beef chuck, cut into 1-inch chunks
- 2 tablespoons vegetable oil
- 3 carrots, peeled and cut into 1/2-inch slices
- 2 large onions, cut into chunks
- 2 garlic clove, minced
- 1 (12-ounce) can beer
- 1/2 cup beef broth
- 1 tablespoon steak sauce
- 2 teaspoons steak seasoning
- 1 tablespoon honey
Meatball Subs

Preheat oven to 450 degrees F
- Meatballs:
- 1 1/2 pounds ground sirloin
- 1 large egg, beaten
- 1 cup (3 handfuls), Italian bread crumbs
- 1 medium onion, chopped fine
- 4 cloves garlic, crushed and minced
- 1/2 teaspoon crushed red pepper flakes
- 2 teaspoons (several drops) Worcestershire sauce,
- 1/4 cup (a couple of handfuls) flat-leaf parsley leaves, chopped
- 1/4 cup (a couple of handfuls) grated Parmigiano or Romano
- Coarse salt and black pepper
- Minute Marinara Sauce:
- 2 tablespoons extra-virgin olive oil, (2 turns around the pan)
- 4 cloves garlic, crushed and chopped
- 1/2 teaspoon crushed red pepper flakes
- A handful flat-leaf parsley leaves, chopped, about 2 tablespoons
- 1/2 teaspoon dried oregano
- 1 (28 ounces) can crushed tomatoes
- 1 (14 ounces) can chunky style crushed tomatoes
- Salt and freshly ground black pepper
- 4 semolina crusty sub rolls, with or without sesame seeds
- 1 (10-ounce) bag (2 1/2 cups) shredded provolone or Italian 4-cheese blend
- Shredded basil (sweet) or shredded arugula (spicy) leaves, for garnish
- Oven fries, as an accompaniment, recipe follows
- 4 medium white skinned potatoes, each cut into 8 wedges lengthwise
- Extra-virgin olive oil, to coat
- Grill seasoning blend or coarse salt and black pepper

1 Heat oven to 375°F. Line large cookie sheet with parchment paper
- 1 box (8 oz) Green Giant® Simply Steam™ frozen garden vegetable medley, thawed
- 2 cups chopped cooked chicken breast
- 1 cup grated Parmesan cheese
- 1/2 cup mascarpone cheese
- 2 teaspoons Italian seasoning
- 2 cans Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 1 egg white, beaten
Neiman Marcus Lemon Bars

- Topping:
- 1 box lemon-flavored cake mix
- 1 stick margarine, softened
- 1 teaspoon vanilla
- 1 egg
- 1 cup chopped pecans
- 1 lb powered sugar
- 1 (8oz.) cream cheese, softened
- 3 eggs
Oatmeal Chocolate Chip Cookie Truffles

- 1 package (16 oz) Pillsbury® Ready to Bake!™ refrigerated oatmeal chocolate chip cookies
- 1 bag (12 oz) semisweet chocolate chips (2 cups)
- 2 tablespoons quick-cooking or old-fashioned oats
Tomato Mozzarella Salad ~ With a Twist!

Cut the tomatoes into bite sized pieces
- 2 pints mixed tomatoes (cherry, grape, pear, garden)
- 1 container fresh mozzarella, cherry size
- 1 avocado, flesh diced
- 3 T mixed fresh herbs
- 1/4 C extra virgin olive oil
- 1/4 C vinegar

- 4 4 2 1/2 skin-on chicken thighs (about 2 1/2 lbs.)
