Place flour in a large mixing bowl
- 6 cups self-rising flour*
- 1 cup solid shortening, like Crisco
- 2 cups buttermilk
- OR 6 cups all-purpose flour mixed with 3 tablespoons baking powder and 1 tablespoon salt
Neapolitan Cake

1 Heat oven to 325°. Grease and lightly flour 12-cup fluted tube cake pan, or spray with baking spray with flour
- 1 box white cake mix
- 1 cup water
- 1/4 cup vegetable oil
- 3 egg whites
- 1/4 teaspoon almond extract
- 10 drops red food color
- 1/4 cup chocolate-flavored syrup
- 1/2 cup chocolate frosting
Caribbean Pork and Jasmine Rice

1 Cook rice as directed on package
- 1 cup uncooked jasmine rice
- 1 pound pork tenderloin
- 1 small red onion, coarsely chopped
- 1 teaspoon Caribbean jerk seasoning
- 1 medium sweet potato, peeled, cut lengthwise in half, then cut crosswise into 1/8-inch slices
- 1/2 cup water
- 1 cup snow (Chinese) pea pods (4 ounces)
- 1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
- 1/4 cup lime juice
- 2 tablespoons honey
- 2 teaspoons cornstarch

- 13 ounces angel food cake
- 2 (21 ounce) cans cherry pie filling
Giant Ganache-Topped Whoopie Pie

1 Heat oven to 350° (325° for dark or nonstick pans)
- Cake:
- 1/2 box devil's food cake mix (about 1 2/3 cups)
- 1/2 cup water
- 1/4 cup vegetable oil
- 2 eggs
- Filling:
- 3/4 cup butter or margarine, softened
- 1 jar (7 oz) marshmallow creme
- 1 cup powdered sugar
- 1 teaspoon vanilla
- Ganache:
- 1/2 cup whipping cream
- 4 oz semisweet baking chocolate, chopped

- 1 1/2 cups milk
- 1 1/2 cups cooked rice
- 2 cups cubed cooked turkey
- 1 (4 ounce) can sliced mushrooms, drained
- 1/3 cup chopped green pepper
- 2 tablespoons chopped pimiento
