Spicy Catfish

Preheat oven to 350 degrees F
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon ground red pepper
- 1/2 teaspoon ground cumin
- 1 teaspoon black pepper
- 1 1/2 pounds catfish fillets, skin removed
Waikiki Meatballs

1. Combine ground beef, saltine cracker crumbs, onion, milk, egg, salt and ginger in a large bowl
- 1 1/2 lb. ground beef
- 2/3 c. saltine cracker crumbs
- 1/3 c. minced onion
- 1/4 c. milk
- 1 large egg slightly beaten
- 1 1/2 t. salt
- 1/4 t. ginger
- 1 T. vegetable oil
- 1 (15 oz.) can pineapple tidbits in juice
- 1/2 c. packed brown sugar
- 1/3 c. cider vinegar
- 2 T. corn starch
- 1 T. soy sauce
- 1/3 c, chopped bell pepper
Cheesy Barbecue Beef Rigatoni *(GOOD)*

Cook and drain pasta as directed on package; set aside
- 3 cups uncooked rigatoni or ziti pasta (9 oz)
- 1 lb lean (at least 80%) ground beef
- 1/2 cup sliced green onions (8 medium)
- 1 can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
- 1/2 cup barbecue sauce*
- 1 cup shredded Cheddar cheese (4 oz)
Barbecue Pork Chops

1 Place potato chips in 1-gallon resealable plastic food-storage bag; crush with rolling pin
- 1 1/2 cups barbecue-flavored potato chips (1 1/4 oz)
- 1/2 cup Original Bisquick® mix
- 1 egg, beaten
- 2 tablespoons barbecue sauce
- 6 pork boneless loin chops, 1/2 inch thick (about 1 1/2 lb)
- 1 tablespoon vegetable oil
- 3/4 cup barbecue sauce
Roasted Chicken and Vegetables

Preheat oven to 450 degrees
- 1 lb chicken breast, cut to bite size pieces (I buy boneless skinless chicken breasts @ Meijer when the 40 oz package is on sale for either $6.99 pr buy one, get one free – I am only using a 1/4 of the package ~ so roughly used $1.75)
- 5 medium russet potatoes, peeled and cubed to bite size pieces (10lb bag of potatoes for $1.99 ~ so roughly used $.50)
- 4 carrots, peeled and sliced to same size pieces (3lb bag of carrots for $1.50 ~ so roughly used $.50)
- 3 handfuls frozen broccoli florets (I buy 4lb bags @ Sam’s club for ~ $5.00 ~ I roughly use about $.50)
- 3 handfuls frozen corn (I also buy these in 4lb bags @ Sam’s club for ~ $3.00 ~ I roughly use about $.50) – you could also use 1 can
- Olive Oil to drizzle
- Garlic powder, salt & pepper, Italian seasoning
Texas Chili

1 Cut chili peppers into small pieces
- 3 dried ancho chili peppers, seeded
- 1 to 2 tablespoons crushed small hot dried chili peppers or 1 to 2 tablespoons crushed red pepper
- 2-1/2 pounds beef round steak, cut into 1/2-inch cubes
- 2 tablespoons cooking oil
- 1 medium onion, chopped (1/2 cup)
- 4 cloves garlic, minced 2 teaspoons ground cumin
- 6 medium tomatoes, peeled, seeded, and coarsely chopped (3 cups)
- 1 10-1/2-ounce can condensed beef broth
- 1-1/3 cups water
- 1/2 teaspoon dried oregano, crushed
- Cooked red kidney beans (optional)
- Sliced pickled peppers (optional)
Pink Peach Cupcake

Preheat oven to 350. Line 24 cupcake cups
- Cupcake:
- 1 Cup Sugar
- 1/2 Cup Butter unsalted
- 2 Med Eggs
- 2 tsp vanilla extract
- 1/2 cup flour
- 1/2 cup 2% milk
- 1-3/4 tsp baking powder
- 1/2 cup peach nectar
- 1/2 Cup peach nectar to soak the cupcakes when they come out of the oven.
- Buttercream Frosting:
- 1 Cup Butter
- 3 Cups powdered sugar
- pink or peach food coloring
- Sprinkles

In a soup pot over medium-high heat, heat oil; cook sausage and onions 8 to 10 minutes, or until sausage is browned
- 1 tablespoon olive oil
- 1 pound turkey sausage, casing removed
- 1 cup chopped onion
- 6 cups chicken broth
- 3 (15-ounce) cans great northern beans, drained
- 2 carrots, peeled and cut into 1/2-inch chunks
- 2 potatoes, peeled and cut into 1/2-inch chunks
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups chopped kale
No Toil Chicken in Foil
