- 1/4 cup chopped oil-packed sun-dried tomatoes, drained
- 2 tablespoons herbes de Provence
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon finely chopped garlic
- 1 teaspoon salt
- 8 bone-in chicken thighs, skin and fat removed (about 2 lb)
- 1 1/2 cups sliced mushrooms
- 1 cup uncooked regular long-grain white rice
- 1 medium carrot, shredded (3/4 cup)
- 2 cups boiling water
- 1 tablespoon chopped fresh Italian (flat-leaf) parsley
- 2 teaspoons grated lemon peel
Beef Stew *(GOOD)*

Place all ingredients into a portable roasting oven
- Add in desired amounts of:
- 1 pound beef stew meat, cut up
- 1 package dried onion soup mix
- 1 can beef broth
- 1 can cream of mushrooms soup
- 1 soup can of water

- onions, peeled and cut into chunks

- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 lb boneless pork loin, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 medium yellow onion, chopped (1/2 cup)
- 1 medium green bell pepper, cut into 1-inch pieces
- 1 medium red bell pepper, cut into 1-inch pieces
- 2 cloves garlic, finely chopped
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon crushed red pepper flakes
- 1 1/4 cups orange juice
- 1 1/2 cups uncooked regular long-grain white rice
- 3 cups water
Triple Chocolate Mousse Cake

*To make the bottom layer:* Butter the bottom and sides of a 9-inch springform pan
- For Bottom Layer:
- 6 teaspoon unsalted butter, cut into 6 pieces (plus extra for greasing the pan)
- 7 ounces bittersweet chocolate, finely chopped
- 3/4 teaspoon instant espresso powder
- 1 1/2 teaspoon vanilla extract
- 4 large eggs, separated
- Pinch of salt
- 1/3 cup light brown sugar, packed
- For Middle Layer:
- 2 tablespoon cocoa powder, preferably Dutch-processed
- 5 tablespoon. hot water

One-Pot Paella

Coat a soup pot with nonstick cooking spray
- 1/2 pound turkey sausage, cut into 1/2-inch slices
- 1 onion, chopped
- 1 red bell pepper, cut into thin strips
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 1/2 cups uncooked long-grain rice
- 3/4 cup water
- 1 (14-1/2-ounce) can diced tomatoes, undrained
- 2 (8-ounce) bottles clam juice
- 1/2 teaspoon ground turmeric
- 1/2 pound medium shrimp, peeled and deveined
