Zippy Ziti & Broccoli

Prepare ziti according to package directions; add broccoli during last minute of cooking time
- 8-oz. pkg. ziti pasta, uncooked
- 2 c. frozen broccoli cuts
- 1 clove garlic, minced
- 16-oz. jar Alfredo sauce
- 14-1/2 oz. can Italian-style diced tomatoes
- 2 c. shredded mozzarella cheese
- 2 T. Italian-flavored dry bread crumbs
- 2 t. margarine, melted
Zesty Ricotta Pie

Preheat oven to 400 degrees F
- 1 (15 ounce) container ricotta cheese
- 1/2 cup sugar
- 1 teaspoon lemon zest
- 3 eggs
- 1 teaspoon vanilla extract
- 1 (9-inch, 6 ounce) graham cracker pie crust
- 3 tablespoons raspberry preserves, melted
- 1 tablespoon chopped blanched almonds
Gluten Free Zucchini-Devil's Food Snack Cake

1 Heat oven to 350°F. Grease bottom only of 8-inch or 9-inch square pan with shortening or cooking spray
- 1 box (15 oz) Betty Crocker® Gluten Free devil's food cake mix
- 1/2 cup butter, softened
- 1 cup shredded unpeeled zucchini (about 1 medium)
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/3 cup water
- 3 eggs
- 1/4 cup packed brown sugar
- 2 tablespoons butter, softened
- 1/4 cup chopped walnuts or pecans

Preheat oven to 350 degrees F
- 1 (18.25-ounce) package strawberry cake mix
- 1 (16-ounce) container frozen whipped topping, thawed
- 1 quart fresh strawberries, washed, hulled, and sliced
Pickled Peaches

Pour sugar and vinegar into a large saucepan, and stir to dissolve sugar
- 4 cups sugar
- 2 cups white vinegar
- 4 (3 inch) cinnamon sticks
- 15 whole cloves
- 4 pounds fresh peaches – peeled, pitted and sliced
Filet Mignon with Dijon Sauce

SEASON steaks with pepper
- 4 beef filet mignon steaks (1 lb.)
- 1/4 tsp. ground black pepper
- 2 tsp. peanut oil
- 4 tsp. finely chopped onions
- 2 Tbsp. dry sherry
- 1/4 cup whipping cream
- 2 Tbsp. Dijon Coarse Ground Mustard
Darn Good Chocolate Cake #2

Place rack in middle of oven and preheat to 325
- 1 package of Devils food or dark chocolate fudge cake mix
- 1 package of Devils Food or chocolate fudge instant pudding mix (3.9 oz)
- 1 cup sour cream
- 1/2 cup water (I use milk, others have even used Hershey syrup)
- 1/2 cup vegetable oil (some people sub softened or melted butter)
- 4 large eggs (if making as a sheet, I’d reduce to 3 eggs)
- 1 1/2 cups semisweet chips
- Chocolate Syrup Frosting (recipe follows)
Oatmeal Cookies with Chocolate Chips & Cherries

Preheat oven to 375 F Blend first 4 ingredients with mixer
- 2 sticks butter
- 1 cup lt brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups old fashioned oats
- 1 1/2 cups all purpose flower
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/4 cups dried tart cherries (6 oz)
- 1 1/4 cups semisweet chocolate chips
Easy Mexican Chicken and Beans

1 Spray 10-inch skillet with cooking spray
- 1 lb uncooked chicken breast strips for stir-fry
- 1 package (1 oz) taco seasoning mix
- 1 can (15 oz) black beans, drained, rinsed
- 1 can (11 oz) whole kernel corn with red and green peppers, undrained
- 1/4 cup water
- Flour tortillas, if desired

Bring a soup pot of water to a boil over high heat
- 8 ears fresh corn, husked (see Option)
- 1/2 cup vegetable oil
- 1/4 cup cider vinegar
- 1 1/2 teaspoons fresh lemon juice
- 1/4 cup chopped fresh parsley
- 2 teaspoons salt
- 2 teaspoons sugar
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground red pepper
- 2 large tomatoes, coarsely chopped
- 1/2 cup green bell pepper, chopped
- 2 scallions, thinly sliced
