Lemon-Garlic Shrimp Scampi

This Lemon-Garlic Shrimp Scampi recipe is zestfully delicious
- 1 package linguine, prepared according to package instructions
- 1 pound large (16-20 count) shrimp, *shelled and deveined (leave the tail on, it looks fancier that way)
- 3 tablespoons butter
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (add more if you like it hot!)
- 1/2 cup white wine
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon fresh lemon zest
- Freshly ground black pepper and salt to taste
- 2 tablespoons finely chopped parsley
- Parmesan cheese for sprinkling
- Extra chopped parsley for garnishing
Garden Fresh Chili on Red Potatoes

1. Place all ingredients in crockpot and BREW! Cook on high 8-10 hours
- 3/4 lb ground beef, cooked ($1.12)
- 1 cup dried beans ($.10)

- 1 onion, chopped ($.30)
- 1 green pepper and 1 red pepper (FREE!!!)
- 1 can diced tomatoes ($.23)
- 1 can tomato sauce ($.33)

- 1 t garlic powder (I’m all outta the fresh stuff!) ($.01)

HEAT oven to 350°F. Line 12 muffin cups with paper baking cups
- FILLING:
- 4 ounces cream cheese, softened
- 3 tablespoons Orange Marmalade Spreadable Fruit
- 1 large egg yolk
- 1 tablespoon All Purpose Flour
- CUPCAKES:
- 1 (14.5 oz.) package Gingerbread Mix
- 1/4 cup sugar
- 2/3 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- FROSTING:
- 2/3 cup Cream Cheese Flavored Frosting
- OR 1 (13 oz.) can Velvety Cream Cheese Flavored No-Fuss Frosting
- 3 tablespoons Orange Marmalade Spreadable Fruit
Great Pumpkin Cookies

In a bowl, combine flour, baking powder, spices and salt
- 4 c. all-purpose flour
- 2 t. baking powder
- 2 t. cinnamon
- 1 t. allspice
- 2 t. nutmeg
- 1 t. salt
- 2 c. margarine
- 2 c. sugar
- 2 eggs, beaten
- 2 T. vanilla extract
- 15-oz. can pumpkin
- 2 c. semi-sweet chocolate chips
Triple Chocolate Cake

- 8-oz. container sour cream
- 3.9-oz. pkg. instant chocolate pudding mix

- 4 eggs, beaten
- 3/4 c. oil
- 1 c. water
- Garnish: vanilla ice cream

1 Cook and drain spaghetti as directed on package
- 8 oz uncooked spaghetti
- 1/3 cup Progresso® Italian style panko crispy bread crumbs
- 1/3 cup shredded Parmesan cheese
- 4 boneless skinless chicken breasts, flattened slightly
- 2 cloves garlic, finely chopped
- 1 can (18 oz) fire roasted tomato cooking sauce
- 1 cup shredded mozzarella cheese (4 oz)
Puerto Rican Style Turkey

Pull turkey out of salt water rinse and dry
- In a food Processor grind into paste:
- 1 10 to 12 Pound turkey (soak in 5 gallon bucket filled with salt water-- best if it can soak over night--keep ice on it)
- 10 cloves of garlic
- 2 1/2 teaspoons oregano
- 10 teaspoons salt
- 5 teaspoons black pepper
- 1/4 cup olive oil
- 1/8 cup vinegar
- 4 fresh limes or 1/2 cup lime juice
- 1/2 to 1 cup fresh culantro
