Hearty Beef Stew

1. Pat beef dry with paper towels and season with salt and pepper
- 4 lbs. boneless beef chuck-eye roast, pulled apart at seams, trimmed, and cut into 1 1/2 inch pieces
- Salt and Pepper
- 2 Tbs vegetable oil
- 2 onions, chopped fine
- 1/3 cup all-purpose flour
- 1/4 cup tomato paste
- 1 tsp minced fresh thyme
- 2 cups beef broth
- 1/2 cup dry red wine
- 1 1/2 lbs. red potatoes, unpeeled, cut into 1 inch pieces
- 1 lb. carrots, peeled, halved lengthwise, and sliced 1 inch thick
- 2 bay leaves
- 2 cups frozen peas, thawed
- 2 Tbs minced fresh parsley

Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender
- 2 tablespoons butter
- 1 onion, chopped
- 1 stalk celery, chopped
- 3 cups chicken broth
- 8 cups broccoli florets
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- ground black pepper to taste

- 2 cups sour cream
- 4 eggs
- 3/4 cup vegetable oil
- 1/3 cup kahlua
- 1 (6 oz) package chocolate chips
- Kahlua glaze
- 1 cup confectioner sugar
- 4 Tbs Kahlua
Pineapple Chicken

Prepare sauce first by combining al ingredients except corn starch
- Sweet and Sour Sauce:
- 2 Cups Sliced Chicken Meat (raw) breasts only 1" strips
- 18 Pineapple Cubes (Canned)
- 1 whole green pepper (1" slices)
- 1 Cup raw celery (sliced)
- salt and pepper to taste
- 1 Cup white vinegar
- 1 Cup Apricot Nectar
- 1 Cup Brown Sugar
- ! Tbs Worcestershire Sauce
- 1/2 Bottle Calsup
- 1 tsp Cornstarch
Chicken Fried Steak With Gravy

Mix 1/2 cup of flour with the salt and pepper
- 2/3 cup flour
- 1 tsp salt
- Freshly ground pepper
- 2 pounds top-round steak pounded about 1/2 inch thick
- 2 eggs
- 2 tbs cream
- 1/2 cup oil
- 2 cups saltine cracker crumbs, crushed fine
- For Gravy
- 1 onion, sliced
- 1/2 cup cream
- 2 cups chicken broth
- 1 dash worcestershire sauce, optional
- 1 dash hot sauce,optional
Crab Cakes with Peanut Sauce

1. In a small bowl, whisk the first seven ingredients until blended
- 1/4 Cup rice vinegar
- 2 Tbs creamy peanut butter
- 1 garlic clove, minced
- 1 tsp brown sugar
- 1 tsp olive oil
- 1/4 tsp ground mustard
- dash of cayenne pepper
- Crab cakes
- 1 Cup plain greek yogurt
- 2/3 Cup crushed saltines (about 15 crackers)
- 1/4 Cup finely chopped celery
- 1/4 Cup chopped roasted sweet red pepper
- 1/4 Cup minced fresh parsley
- 2 Tbs finely chopped onion
- 1 egg white, lightly beaten
- 1 Tbs fresh lemon juice
- 2 tsp prepared horseradish
- 1/2 tsp paprika
- 1/4 tsp salt
- 1 lb. lump crabmeat, drained
- 1 Tbs olive oil

- 1 7 1/2 oz can tomatoes, cut up
- 1/2 cup elbow macaroni
- 1 4 oz can diced green chili peppers, drained
- 2 to 3 tsp chili powder
- 1/2 tsp garlic salt
- 1/2 cup shredded Monterey Jack or cheddar cheese (2 ounces)
