Sweet Potato Casserole

- 2 cups mashed sweet potato
- 1 1/4 cup sugar
- 2 eggs, beaten
- 3/4 stick butter, melted
- 3/4 cup milk
- 1/2 tsp nutmeg

Best-ever Spaghetti and Meatballs

Meatballs: Preheat oven to 425 degrees
- Meatballs
- 3 slices white bread
- 1 lb ground beef
- 3/4 lb ground pork
- 1/3 cup grated parmesan cheese
- 1 egg
- 3 Tbs chopped fresh parsley
- 1 clove garlic, minced
- 3/4 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/8 tsp pepper
- Sauce
- 2 Tbs olive oil
- 1 small onion, finely chopped
- 2 large cloves garlic, minced
- 3 Tbs sugar
- 3/4 tsp dried basil
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dried oregano
- 1/3 cup red wine
- 2 cans (28 oz) crushed tomatoes with basil
- 1 package (16 oz) spaghetti, cooked
- 1 Tbs chopped fresh parsley
- Shredded Parmesan cheese, optional
Slow Roast Standing Rib Roast

SIRLOIN ROAST

Brown roast on all sides in hot oil in a large Dutch oven; remove meat and set aside
- 1 (4 to 5 lb.) boneless sirloin tip roast
- 2 tbsp. vegetable oil
- 1 c. chopped onion
- 1 clove garlic, crushed
- 3/4 c. hot water
- 3 tbsp. ketchup
- 2 tbsp. vinegar
- 1 tbsp. brown sugar
- 3/4 tsp. salt
- 1 bay leaf
- 1/4 c. all-purpose flour, approximately
- 1/4 c. water, approximately

- 1/2 cup dry sherry
- 2 Tbs olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 2 lbs boneless chicken breasts, cubed
- Sauce
- 2 Tbs butter
- 1 each medium sweet red and green pepper, chopped
- 4 pickled hot cherry peppers, chopped
- 1 medium onion, chopped

- 2 cans (one 29 oz, one 15 oz) tomato puree

- 1 (6 ounce) can tomato paste
- 4 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 tablespoons olive oil
- 1/3 cup finely diced onion
- 1/2 cup white wine

- 1/2 cup plain dried bread crumbs
