Corned Beef and Sauerkraut

Place the sauerkraut in the bottom of the crockpot
- 2 lb. bag of sauerkraut
- 1 medium onion
- 1 small to medium corned beef brisket
Fish Tacos

Preheat oven to 500 Degrees with rack on the top level
- Marinate Fish in Lime Juice:
- 4 oz. fresh tilapia fillets -- halved (I've made this twice and used Dory and Cod, both were great) (4 to 4)
- Blend then Coat fish in:
- 3 Tblsp. all purpose flour
- 3 Tblsp. yellow cornmeal
- 1 tsp. chili powder
- 1 tsp. kosher salt
- 1/4 tsp. cayenne
- Dressing
- 1 (8 ounce) container light sour cream
- 1/2 cup adobo sauce from chipotle peppers
- 2 tablespoons fresh lime juice
- 2 teaspoons lime zest
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/2 teaspoon seafood seasoning, such as "Old Bay™
- salt and pepper to taste

- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 shallot, minced
- 1 clove garlic, minced
- salt and ground black pepper to taste
Stuffed Pork Chops

Place stuffing in pockets of chops; secure with toothpicks
- 1 1/2 - 2 c. prepared stuffing
- 6 double pork chops, slit for stuffing
- 1 tbsp. shortening
- Salt & pepper
- 1/2 c. Heinz 57 sauce
- 1/3 c. water

Boil potatoes and mash, set aside melt butter in pan, add onions and saute to translucent

- 5 Medium Onions
- 5 Medium Potatoes
- 5 Stalks of Celery
- 9 Large Eggs
- 3 Sticks of butter

Grandma's Potato Salad

Place potatoes is a saucepan and cover with water; bring to a boil
- 6 to 7 medium red potatoes (about 2 pounds)
- 3/4 cup mayonnaise
- 1/2 cup of sour cream
- 1/2 cup plain yogurt
- 1/3 cup thinly sliced green onions
- 2 to 3 dill pickle spears, chopped
- 4 1/2 teaspoons prepared horseradish
- 3 garlic cloves, minced
- 1/2 tsp celery seed
- 1/2 tsp salt
- 1/4 tsp pepper
- Dash onion salt
- Dash garlic powder
- 4 hard cooked eggs, coarsely chopped

- 1 teaspoon cumin, ground
