Old-Time Beef Stew

- 2 pounds stew beef
- 2 tablespoons vegetable oil
- 2 cups water
- 1 tablespoon Worcestershire sauce
- 1 clove garlic, peeled
- 1 or 2 bay leaves
- 1 medium onion, sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- Dash ground allspice or ground cloves
- 3 large carrots, sliced
- 3 ribs celery, chopped
- 2 tablespoons cornstarch

- Garlic salt
- Fines herbes (equal parts dried parsley, chervil, chives and tarragon, mixed well)
Roasted Pineapple Milkshake

- 1/3 pint lemon sorbet
- 1/3 pint frozen vanilla ice cream

- 3 cups fresh strawberries, sliced
- 2 tablespoons cognac
- 1/4 cup sugar

- 2 cups buttermilk

- 1 teaspoon salt
- 4 teaspoons dried thyme
- 4 teaspoons dried sage
- 4 sticks cold unsalted butter, cut into 1 tablespoon pieces
- 12 to 16 tablespoons cold water
- 3 tablespoons butter
- 1 sweet onion, diced
- 1 medium shallot, diced
- 5 celery stalks, diced
