Tex-Mex Meatloaf with Chipotle Chile Glaze and Cheddar Mashed Potatoes

- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 large red bell pepper, stemmed, seeded and finely chopped
- 1 poblano pepper, stemmed, seeded and finely chopped

- 1 1/2 teaspoons Emeril's Southwest Essence
- 1 teaspoon salt
