Posole (Mexican Soup)

In a large saucepan, heat oil over medium
- 1 Tbsp. olive oil
- 1 pork tenderloin or 3 chicken breasts
- coarse salt and ground pepper
- 1 medium chopped onion
- 2 garlic cloves, minced
- 1 Tbsp. minced chipotle chiles in adobo
- 2 14.5 oz. chicken broth
- 2 14.5 oz cans hominy
- 1 can diced tomatoes in juice
- 1/2 c. fresh cilantro
- lime for serving
Buffalo Chicken Dip

Combine all ingredients (can add more wing sauce if you like it spicier)
- 2 cans chicken. Or one cooked chicken breast shredded.
- 1/4 c. Pete's Red Hot Sauce (or other wing sauce)
- 1 pkg. cream cheese
- 1/2 c. ranch dressing
- 1/4 c. blue cheese crumbles plus more for top
Spinach and Parmesan Dip

Squeeze excess liquid from the spinich
- 1 10oz. package frozen chopped spinich, thawed
- 1 c. sour cream
- 1/4 c. grated parmesan
- 1 clove of garlic, finely chopped
- Kosher salt and black pepper
- Dippers such as celery, pita chips, bread
Stuffed Shells

Mix ricotta, spinach, parmesan salt and pepper
- 1 box lg. pasta shells
- 2 pkgs. chopped spinach slightly cooked & drained good
- 2 15oz. containers ricotta
- 1/2 c. grated parmesan
- 2 cups mozzarella cheese
- 1 24oz. jar of marinara sauce
- coarse salt and pepper
Chicken Splendid

Wrap chicken breasts in bacon and place in baking dish
- 5 boneless chicken breasts
- 1 can cream of mushroom soup
- 3/4 cup sour cream
- Sliced bacon
Goat Cheese Salad

Heat broiler. Brush a baking sheet with oil and set aside
- 1/2 c. olive oil
- 3 large red potatoes
- 1 large egg
- salt and pepper
- 1 1/2 c. bread crumbs
- 1 12oz. log of goat cheese
- 1 Tbsp. white wine vinegar
- 1 Tbsp. grainy or dijon mustard
- 8 oz. greens
Ice Cream Pie

In a large bowl combine the cereal and the chocolate until completely coated
- 8 oz. chopped semi sweet morsels, melted
- 4 c. rice crispies
- 2 pints of your favorite ice cream
Tuna Noodle Casserole

Preheat oven to 400 degrees
- 1 can cream of celery soup
- 1/2 c. milk
- 2 c. cooked egg noodles
- 1 c. cooked peas
- 2 Tbsp. chopped pimiento
- 2 cans tuna
- 1 Tbsp. butter
- 2 Tbsp. dry bread crumbs
Zucchini Tomato Pie

Heat oven 400° Grease pie plate and add zucchini, tomato, onion, cheese & mushrooms to pie plate
- 3 c. chopped zucchini
- 1 sm. can mushrooms
- 1 c. chopped tomato
- 1/2 c. chopped onion
- 1/2 c. parmesan cheese
- 1 1/2 c. milk
- 3 eggs
- 3/4 c. bisquick
- Salt & Pepper to taste
Maple Pumpkin Pie

Set oven rack to lowest position and heat to 350'
- 1 piecrust
- 2 large eggs
- 1 15 oz. can of pumpkin puree
- 1 c. heavy cream
- 1/2 c. pure maple syrup
- 3/4 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1/8 tsp. cloves
