Spice Cookies with Pumpkin Dip

For the cookies: In a mixing bowl, cream butter and sugar
- For the cookies:
- 1 1/2 c. butter, softened
- 2 c. sugar
- 2 eggs
- 1/2 c. molasses
- 4 c. all-purpose flour
- 4 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. each ginger and cloves
- 1 tsp. salt
- Additional sugar
- For the Dip:
- 1 8oz. pkg. softened cream cheese
- 18 oz. pumpkin pie mix
- 2 c. confectioner's sugar
- 1/2 - 1 tsp. ground cinnamon
- 1/4 -1/2 tsp. ground ginger

Chicken and Wild Rice Soup

Heat oil in a large pot over medium high heat
- 1 Tbsp. Olive Oil
- 1 8 oz. package sliced mushrooms
- 1 c. chopped onion
- 6 c. low-sodium chicken broth
- 1 lb. boneless, skinless chicken breasts or thighs, cut into 1" cubes
- 3/4 c. long grain wild rice or wild rice blend
- 2 Tbsp. chopped garlic
- 1 bay leaf
- 1/4 c. chopped parsley
- Salt and pepper
Chicken and Broccoli & Tomato Alfredo

Saute chicken in 1 tbs. olive oil until browned
- 1 lb. bonesless chicken breast cut into 1" cubes
- 1 large onion, chopped
- 4 cups broccoli
- 1 14.5 oz. can small diced tomatoes, drained
- 1/4 c. scallion and chive cream cheese
- Olive Oil
- salt and pepper
- 1 Tbs. flour
- 1/2 tsp. dried Thyme
- Cooked Rice
Lemon Cream Pie

Preheat oven to 425 degrees
- FOR THE PIE AND FILLING:
- 1 recipe Our Favorite Pie Crust, unbaked
- 4 large eggs
- 1 cup sugar
- 1/2 cup sour cream
- 3/4 cup fresh lemon juice , (from about 4 lemons)
- 1/4 teaspoon salt
- FOR THE TOPPING:
- 1 teaspoon unflavored gelatin , (from a 1/4-ounce envelope)
- 1 1/2 cups heavy cream
- 1/4 cup sugar
Pork Chops with Bourbon Mustard

- 2 chops 3/4" thick
- 3 Tbsp. butter
- 1 Tbsp. olive oil
- 3 Tbsp. bourbon
- 2 Tbsp. minced shallot
- 1 c. sliced mushrooms
- 1/8 tsp. dried thyme
- 1 Tbsp. dijon mustard
- 1/4 c. heavy cream
- 1 Tbsp. parsley
Chicken Enchiladas with Creamy Green Sauce

Preheat oven to 450 degrees
- 3 pounds bone-in, skin-on chicken breast halves
- Coarse salt and ground pepper
- 5 garlic cloves, unpeeled
- 2 jars (16 ounces each) medium green salsa
- 3/4 cup heavy cream
- 12 corn tortillas (6-inch)
- 12 ounces Monterey Jack cheese, coarsely shredded (3 cups)
- 1/2 cup fresh cilantro, chopped (optional)
Pumpkin Pie Parfaits

Put 7 cookies in a resealable plastic bag and crush into crumbs with a heavy pan
- 13 gingersnaps, chocolate wafers or graham crackers
- 1 tablespoon unsalted butter, melted
- 3/4 cup plus 1 tablespoon confectioners' sugar
- 1/2 cup canned pure pumpkin
- 2 1/2 teaspoons bourbon
- Pinch of freshly grated nutmeg

- 1/4 cup olive oil, plus more for foil
- 1/2 cup all-purpose flour
- 2 garlic cloves, minced
- 6 cups whole milk
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 1 package (10 ounces) frozen peas
- 1/2 pound carrots (4 to 5), halved lengthwise and thinly sliced
- Coarse salt and ground pepper
- 1 container (15 ounces) part-skim ricotta (about 2 cups)
- 1 large egg
- 1 package (9 ounces) no-boil lasagna noodles (12 to 16 noodles)
