Frozen Peanut Butter Pie

Preheat oven to 350'. Combine crumbs, 3 T
- 1 2/3 c. chocolate graham cracker crumbs (about 8.5 cookie sheets)
- 7 T. sugar, divided
- 2 large egg whites, lighly beaten
- Cooking Spray
- 1 1/4 c. fat free milk
- 2/3 cup fat- free crunchy peanut butter
- 1/2 tsp. vanilla
- 1/2 c. fat-free cream cheese, softened
- 1 8 oz. container fat free whipped topping
- 3 T. finely chopped salted peanuts
- 1/4 c. shaved milk chocolate (1 oz)
Corn Pudding

Melt butter, add flour and milk
- 1 can corn
- 1 Tbs. butter
- 1 c. milk
- 2 eggs
- 2 teas. sugar
- 1/4 tsp. each salt, pepper & paprika
- 2 Tbl. flour
Chicken, Mushroom and Goat Cheese Burritos

In a large skillet with a lid, heat oil over medium
- 2 Tbsp. Olive oil
- 1 medium onion, chopped
- 1 jalapeno, cleaned and minced
- salt and pepper
- 10 oz. button mushrooms, sliced
- 4 c. shredded chicken (use rotisserie)
- 1 package 10 oz. frozen corn
- 1 c. prepared green salsa, plus more for serving
- 6 buritto sized flour tortillas
- 1 bunch flat leaf spinich, thick stems removed (3 cups)
- 1 log goat cheese, crumbled
Hello Dolly Bars

These bars can make a sticky mess so it's crucial to to line your pan with parchment paper
- 1 1/2 c. graham cracker crumbs (9 sheets)
- 2 T. butter, melted
- 1 T. water
- 1/3 c. semisweet chocolate chips
- 1/3 c. butterscotch chips
- 2/3 c. sweetened coconut
- 1/4 c. chopped pecans, toasted
- 1 15oz. can fat-free sweetened condensed milk
Split Pea Soup

In a large, deep pot, combine peas, water, ham shank, onion, chicken bouillon & seasonings
- 16 oz. pkg. green split peas
- 3 qts. of water
- 1 small ham shank
- 1 lg. onion
- 2 chicken bouillon cubes
- 1/2 teas. garlic powder
- 1/2 teas. oregano
- 1/2 teas. pepper
- 1 bay leaf
- 1/2 c. carrots sliced thin
- 1 c. chopped celery
Potato Soup

With just enough water to cover first 5 ingredients, simmer about 1/2 hour
- To thicken:
- 1 teas. parsley
- 2 stalks celery chopped
- 1 carrot chopped
- 1 lg. onion chopped
- 1/4 red pepper chopped
- 6-7 lg. potatoes peeled and diced and cooked
- 1 1/2 qts. milk
- 4 Tbs. flour
- 2 Tbs. butter
- 1 teas. salt
Butterscotch Blondies

Heat oven to 350'. Lightly spoon flour into dry measuring cup and level with knife
- 2 c. all-purpose flour
- 2 1/2 c. firmly packed light brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 10 T. unsalted butter
- 3 eggs

Broccoli Rice Casserole

Put rice and water in greased casserole
- 2 c. fresh chopped broccoli
- 1/4 c. chopped onion
- 1 c. minute rice
- 1 8oz. jar Cheese Whiz
- 1 can mushroom soup
- 2/3 c. chopped celery
- 1 c. water
Chocolate Yummy Dessert

Combine and pat into bottom of 9 x 13 greased glass baking dish
- Crust:
- 2 c. flour
- 2 sticks butter
- 1 1/2 c. chopped pecans or walnuts
- Cream cheese layer:
- 1 c. sifted powdered sugar
- 8 oz. cream cheese
- 12 oz. cool whip
- Chocolate pudding layer:
- 2 sm. pkgs. instant chocolate pudding
- 3 c. milk
Chili-Corn Casserole

- 2 tablespoons unsalted butter
- 4 ears corn, kernels cut off
- Kosher salt
- 6 scallions, chopped
- 3 to 4 cups leftover chili
- 1 1/2 cups shredded pepper jack or monterey jack cheese (about 6 ounces)
- 1 18-ounce tube precooked polenta, cut into 12 rounds
