Creamy Black Beans

Soak the beans in a pot of water overnight
- 1 lb. dried black beans, rinsed and picked over
- 3 Tbl. olive oil
- 1 med. onion, chopped
- 4 Cloves garlic, chopped
- 1 jalapeno pepper, halved and seeded
- 2 tsp. ground dumin
- 2 tsp. oregano
- kosher salt
- Queso fresco and cilantro for topping
White Chocolate Gingerbread Blondies

Preheat oven to 350 degrees
- Vegetable-oil cooking spray
- 2 3/4 cups plus 1 tablespoon all-purpose flour
- 1 1/4 teaspoons baking soda
- 1 1/4 teaspoons salt
- 1 1/4 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 1/2 sticks (20 tablespoons) unsalted butter, room temperature
- 1 1/4 cups packed light-brown sugar
- 1/2 cup plus 2 tablespoons granulated sugar
- 2 large eggs plus 1 large egg yolk
- 1 1/4 teaspoons pure vanilla extract
- 1/3 cup unsulfured molasses
- 10 ounces white chocolate, coarsely chopped
Cous Cous Salad

Mix all ingredients and mix with desired amount of dressing
- 1 bx. garlic & olive oil cous cous prepared as package indicates, completely cooled
- 1/2 bg of fresh spinich
- 5 plum tomatoes de-seeded and chopped
- 1 cucumber de-seeded, peeled and chopped
- 4 ozs. feta cheese
- Italian dressing with Balsamic vinegar
California Chicken Salad

combine all ingredients, chill, serve
- 1 can chunk chicken
- 1/4 c. granny smith apple
- 1/4 c. chopped smoked applewood bacon
- 1/3 c. Mayo
- 1/3 c. crumbled Blue Cheese
Coconut Marshmallow Patties

Heat oven to 350 degrees F
- 1 bag (7 ounces) shredded coconut
- 1/2 cup confectioners' sugar
- 1/3 cup cornstarch
- 2 envelopes unflavored gelatin
- 1-1/3 cups granulated sugar
- 2/3 cup light corn syrup
- 1/8 teaspoon salt
- 1 teaspoon coconut extract
Spinach Artichoke Dip

Thaw Spinach, drain excess water
- 1 10 oz. pkg. frozen spinach
- 1/2 c. non-fat sour cream
- 1/2 c. Mayo
- 1/2 c. chopped fresh parsley
- 1/3 c. chopped white onion
- 1 clove minched garlic
- 1/4 tsp. tabasco
- 1 14 oz. can artichoke hearts, drained
- 1 tsp. dill
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Worchestershire Sauce
Pork Loin and Beans

. Rub dried sage, dried rosemary, half the garlic, the salt and pepper over pork
- 1 teaspoon each dried sage and rosemary
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2- 1/2 pounds tied boneless pork loin
- 4 tablespoons extra-virgin olive oil
- 1 onion, chopped
- 1 cup white wine
- 2 cans (14.5 ounces each) cannellini beans
- 1 can (14.5 ounces) fire-roasted diced tomatoes, drained
- 1/4 cup chopped fresh sage
- 1 teaspoon chopped fresh rosemary
- 1/4 cup parsley leaves
- 2 tablespoons toasted pine nuts
Jambalaya

Heat oil in a dutch oven over medium high heat
- 1/4 c. olive oil
- 1 lb. boneless skinless chicken breast
- salt and pepper
- 3 celery stalks, finely chopped
- 1 med. onion finely chopped
- 1 green bell pepper, stemmed, seeded and finely chopped
- 1 lb. andouille sausage cut into 1/2" pieces
- 2 garlic cloves, minced
- 2 c. low sodium chicken broth
- 3/4 tsp. Old Bay
- 1 can (14oz) crushed tomatoes with juice
- 1 c. long grain rice
Classic Pound Cake

- 1 lb. all purpose flour (3 1/4c.)
- 1 T. course salt
- 4 stick softened unsalted butter
- 2 c. sugar
- 1 tsp. pure vanilla extract
- 9 lg. room temperature eggs
