Lemon Curd

Use this recipe to make petite Lemon Cookies using the Basic Sugar Cookie recipe
- 6 large eggs
- 3/4 c. sugar
- 1 T. finely grated lemon zest
- 3/4 c. fresh lemon juice (about 4 lemons)
- 8 T. unsalted butter, cut into pieces
Lemon Mousse

Use the Lemon Curd recipe to make this mousse
- 1 1/2 c. lemon curd
- 1 c. chilled heavy cream
- 3 T. sugar
Asian Cabbage Slaw

This goes great with sloppy toms
- Dressing:
- 2 T. fresh lime juice
- 2 T. rice wine vinegar
- 1 T. vegetable oil
- 2 tsp. sugar
- salt
- Slaw:
- 1/2 small head of shredded savoy or green cabbage ( I use ready made slaw mix from Whole Foods)
- 1 c. fresh chopped cilantro leaves
- 1 grated carrott
- 1/2 fresh jalepeno, minced
Brown Sugar Glaze for Roast Turkey

Prepare Turkey (12lbs) as usual
- 1/2 c. light brown sugar, packed
- 1/4 c. spicy brown mustard
Vegetable Beef Soup

Combine all ingredients in slow cooker
- 1 lb. beef cubes
- 1 c. beef broth
- 1 1/2 c. chopped cabbage
- 1 1/2 c. stewed tomatoes, undrained
- 1 1/2 c. frozen or canned corn
- 1 1/2 c. frozen peas
- 1 1/2 c. frozen green beans
- 1 1/2 c. sliced carrots
- 3/4 tsp. salt
- 1/4-1/2 tsp. pepper
Polenta with MushroomRagout and Asparagus

Heat broiler with rack 5 inches from heat
- 2 Tbsp. olive oil
- 1/2 large red onion, finely chopped
- 2 lbs. mushrooms sliced
- coarse salt and pepper
- 1/2 tsp. crushed rosemary
- 1 tsp. balsamic vinegar
- 4 ozs. goat cheese, crumbled (1 cup)
- prepared polenta
- 1 lb. asparagus
- *Can add cut up chicken too
Cucumber Salad with Sour Cream & Dill Dressing

In a medium bowl, combine sour cream, lemon juice and dill
- 1/2 c. reduced fat sour cream
- 2 T. fresh lemon juice
- 2 T. chopped fresh dill plus more for garnish
- coarse salt and ground pepper
- 4-6 Kirby cucumbers (about 1 lb) halved lengthwise and thinly sliced
