Crab Dip

Mix all ingredients & bake uncovered at 350° for 30-40 minutes
- 2 pkgs. cream cheese (very soft)
- 1 stick butter melted (1/2 c.)
- 4-5 dashes of Worchestershire sauce
- 2 teas. of horseradish
- 4 dashes of Tabasco sauce
- 1 lb. crab meat
- Old Bay to tast
Sweet Potato Balls

Heat oven to 350'. Bake potatoes until tender, then peel and mash
- 4 lg. sweet potatoes or you can use 2 cans of yams
- 2/3 c. packed brown sugar
- 2 T. OJ
- 1 tsp. orange zest
- 1/2 tsp. freshly grated nutmeg
- 2 c. sweetened, shredded coconut
- 1/2 c. sugar (too much leave out)
- 1 tsp. ground cinammon
- 1 large marshmellow per ball
Mothers' Turkey Dressing (Gram) (16 - 18 lb. Turkey)

Christmas, 1989
- 1 1/2 loaves of bread - toasted and broken into small pieces
- 1 med. onion - chopped fine
- 5 hardcooked eggs- chopped fine
- 1 large can mushrooms – chopped
- 5 or 6 large stalks of celery - including leaves - chopped fine
- 1 Tbs. parsley
- 1 stick of butter melted and dribbled over all
- Poultry seasoning and Sage to taste
- Salt and pepper to taste
- MY ADDITIONS TO THE RECIPE: 1 LB. SAGE SAUSAGE, I USE FRESH MUSHROOMS, 3 T. PARSLEY AND I USE 1 1/4 BAGS OF PREPARED STUFFING CUBES.
Irish Potato Candy

In a medium bowl, beat teh butter and cream cheese together until smooth
- 1/4 c. softened butter
- 4 oz. cream cheese
- 1 tsp. vanilla
- 4 c. confectioner's sugar
- 2 1/2 c. flaked coconut
- 1 T. ground cinnamon
Coconut Cream Pie

- In blender:
- 4 eggs
- 2 1/2 c. milk
- 1 c. sugar
- 1 tsp. Vanilla
- 1/2 stick butter
- 1/2 c. Bisquick
- 1 c. coconut
Texas Sheet Cake

Sift together sugar and next 4 ingredients in a large bowl
- 2 c. sugar
- 2 c. all-purpose flour
- 1 teas. baking soda
- 1 teas. ground cinnamon
- 1/8 teas. salt
- 1/2 c. butter or margarine
- 1/2 c. shortening
- 1/4 c. unsweetened cocoa
- 1 c. water
- 1/2 c. buttermilk
- 2 large eggs, lightly beaten
- 1 teas. vanilla extract
- Chocolate icing
- Vanilla ice cream-optional.
Mexican Style Eggs

Heat oven to 250'. Wrap the tortillas in foil and place in the oven
- 4 6" corn tortillas
- 8 oz. black beans
- 10 oz. red enchilada sauce or 16oz. jar of red salsa
- 4 large eggs (1-2 per person)
- 4 oz. cheddar cheese
- 4 scallions white and light green parts thinly sliced
- 1/4 tsp. kosher salt
- 1/4 tsp. black pepper
Texas Sheet Cake Icing

Combine butter, cocoa, and milk in a saucepan
- 1/2 c. butter or margarine
- 1/4 c. unsweetened cocoa
- 6 Tbs. milk
- 1 (16-oz.) pkg. powdered sugar
- 1 teas. vanilla
- 1 c. chopped pecans, toasted
Chocolate Frosting

Put the chopped chocolate in a heat proof medium bowl
- 4 ozs. bittersweet chocolate, finely chopped
- 1/2 c. heavy cream
- 3 T. unsalted butter
- 1 T. light corn syrup
- Pinch of salt
Mexican Lasagna

Rinse the black beans and corn in a collander and set aside
- 1 can of refried beans flavored with chili's and lime
- 1 box of no-boil lasagna noodles
- 8 bag of mexican cheddar cheese
- 3/4 of an 8oz container of ricotta cheese
- can of green chilies
- can of corn
- black beans
- 1 lb ground beef if desired
- 2 bottles/pouches of enchilada sauce
