Sausage Cauliflower Spaghetti

Bring a large pot of salted water to a boil
- Kosher salt
- 12 ounces spaghetti
- 3 tablespoons extra-virgin olive oil, plus more for drizzling
- 12 ounces sweet Italian turkey sausage, casings removed
- 6 cloves garlic, sliced
- 1 small head cauliflower, broken into small florets
- 1 bunch scallions, chopped
- 1 cup grated pecorino romano or parmesan cheese
Lemon Mousse

In a small bowl, combine lemon juice and 1/4 cup cold water
- 1/3 to 1/2 cup fresh lemon juice, strained
- 2 1/4 teaspoons unflavored powdered gelatin (from 1 packet)
- 1/2 cup sugar
- Coarse salt
- 1 cup cold heavy cream
- 1 cup fresh blackberries (6 ounces)

Let bechamel cool 10 minutes, then whisk in cheese, Dijon mustard, Worcestershire sauce, and cayenne
- 2 cups Bechamel Sauce
- 2 cups shredded Gruyere or fontina cheese or crumbled fresh goat cheese
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- Pinch of cayenne pepper
- 1 large head cauliflower, cut into florets
- 3 tablespoons extra-virgin olive oil
- Coarse salt and ground pepper

Cream butter, gradually beat in sugar
- 1/4 c. butter
- 1/2 c. light brown sugar
- 2 eggs
- 1 1/2 c. sifted flour
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. cloves
- 1 lb. raisins
- 1/2 c. bourbon
- 1 lb. chopped pecan halves
- 1/2 lb. diced candied pineapple
- 1/2 - 3/4 lb. red & green candided cherries
- Soak raisins overnight in bourbon.
Creamed Corn

Melt butter in saute pan and add the onion and cook until soft, 4-5 mins
- 2 Tbs. Butter
- 1 sm. onion chopped
- 4 c. corn
- 1 c. half and half
- 1 Tbs. flour
- salt and pepper to taste

In a large Dutch oven or heavy pot, heat oil over high
- 1 tablespoon vegetable oil
- 2 pounds boneless beef chuck, cut into 1/2-inch cubes
- coarse salt and ground pepper
- 1 medium onion, sliced lengthwise
- 2 tablespoons all-purpose flour
- 3 cans (14.5 ounces each) reduced-sodium chicken broth
- 1/2 pound carrots, cut into 1-inch chunks
- 2 medium russet potatoes, peeled and cut into 1-inch dice
- 2 cups egg noodles
- 3 tablespoons finely chopped fresh parsley
- 1 teaspoon red-wine vinegar

- 1/8 tsp. ground nutmet
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/5 c. millk
- 1 beaten egg
- 1/4 c. grated parmesan cheese
