Chicken with Tarragon and Leaks

Place the potatoes in the bottom of the slow cooker
- 1 1/2 lbs. baby new potatoes (about 16)
- 8 small skinless chicken thighs
- 3 leeks (white and green parts) halved lengthwise and cut into 1 1/2" pieces
- 1 cup dry white wine
- Kosher salt
- 1 10oz. pkg frozen peas
- 1/3 c. heavy cream
- 1 T. chopped fresh tarragon

- 1 box of graham crackers
- 2 sm. boxes of instant french vanilla pudding
- 1 8oz. container of cool whip
- 3 c. milk
- For the Frosting:
- 1/3 c. powdered cocoa
- 1 c. sugar
- 1/4 c. milk
- 1/2 stick butter
- 1 tsp. vanilla
8-Layer Dip

In a medium bowl, combine beans, lime juice, and 2 Tbs
- 1 16oz. can refried beans
- 2 tsp. fresh lime juice
- coarse salt and ground pepper
- 1/2 c. sour cream
- 1/2 c. grated cheddar
- 1 4.5oz. can green chilis
- 2 plum tomatoes chopped & seeded
- 1 avocado, halved, pitted, peeled and diced small
- 1 c. shredded romaine lettuce
- 2 scallions, chopped
- Tortilla Chips
Ceviche-Style Shrimp

- 1/2 c. lime juice
- 1/2 c. finely diced red onion
- 1/4 c. chopped cilantro
- 2 minced garlic cloves
- 1 serrano chili, seeded and very finely chopped
- 2 tsp. olive oil
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
- 1/4 dried oregano
- 1 1/2 lb. shelled, deveined uncooked large shrimp
Avocado Dip

- 1 avocado, coarsely chopped
- 1/3 c. sour cream
- 2 T. Mayo
- 1 tsp. lime juice
- 1/4 tsp. sea salt
Peaches and Cream Bread Pudding with Amaretto Sauce

For the Bread Pudding: Preheat the oven to 350 degrees F
- For the pudding:
- 4 tablespoons unsalted butter, softened, plus 4 tablespoons melted
- 6 cups 1-inch cubes of day-old bread
- 2 cups heavy cream
- 2 cups milk
- 2 pounds peaches, peeled and seeded, cut into 1-inch chunks
- 1 cup sugar
- 5 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon freshly grated nutmeg
- For the sauce:
- 1 stick butter
- 1 cup heavy cream
- 1 cup sugar
- 2 egg yolks
- 1/3 cup amaretto
Chicken and Dumplings

Cut chicken backs, necks and wing tips into 1-inch pieces
- For the broth:
- 1 large roasting chicken, about 5 pounds, back removed and cut into 8 pieces
- 2 sweet onions, such as Vidalia or Walla Walla, coarsely chopped
- 6 cups chicken broth or water
- 2 bay leaves
- 1 1/2 teaspoons salt
- For the dumplings:
- 2 cups all-purpose flour
- 1/3 cup minced fresh soft herbs, such as parsley, tarragon, and green onion tops
- 4 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons butter
- 1 cup plus 3 tablespoons milk
- For the sauce:
- 7 tablespoons butter
- 10 tablespoons all-purpose flour
- 1/4 cup dry white wine
- 2 teaspoons Essence, recipe follows
- 1 teaspoon fresh thyme leaves
- 3 ribs celery, cut into 1/2-inch pieces on the diagonal
- 4 carrots, peeled and cut into 1/2-inch pieces on the diagonal
- 1 large onion, cut into 1-inch pieces
- 1/4 cup heavy cream or milk
- 1/2 cup frozen green peas, thawed
- Salt and freshly ground black pepper
- 3 tablespoons chopped fresh parsley leaves
Picnic Chicken

Heat oven to 400'. Soak chicken for 5 mins
- 2/3 c. buttermilk
- 8 boneless, skinless chicken breasts
- 1 c. corn flakes
- 1 c. bisquick
- 2 packages ranch dressing mix
- Cooking Spray
Creamy Pasta with Asparagus and Peas

Boil pasta add asparagus and peas during last two minutes of cooking
- 1 box of chosen pasta
- 1 bunch of asparagus cut diagonally
- 1 cup of peas
- 1 7.5 oz tub of spreadable herbed cheese
- 3/4 c. sundried tomatoes, drained
- 1/2 c. grated parmesan cheese
- 1 c. white wine, chicken or vegetable broth-may need more to obtain desired consistancy
- 1/2 tsp. dried thyme
- 1/2 tsp. pepper
Bechamel Sauce

- 1/2 teaspoon coarse salt
