Tomato Risotto

Makes enough to feed a family of four and it is not good reheated
- 2 tblsp unsalted butter
- 3 shallots, chopped finely
- 1 cup arborio rice
- 1 1/2 cups pureed tomatoes or chopped canned tomatoes
- 2 cups light no salt veggie stock
- 2 tblsp fresh basil
- 1/2 cup grated parmesan
Bursting Berry Muffins

1. Arrange an oven rack in the lower third of the oven and preheat the oven to 375
- 1 stick unsalted butter, softened
- 3/4 cups sugar
- 2 large eggs, at room temp.
- 2 teas baking powder
- 1 teas pure vanilla extract
- 1/4 teas fine salt
- 1 cup unbleached all purpose flour
- 1/2 cup whole milk
- 2/3 cup whole wheat flour
- 1/3 cup unprocessed wheat bran or additional white whole wheat flour
- 1 10oz bag frozen blueberries (do not thaw)
Buttermilk Fried Chicken

1. Butcher the chicken, if whole
- BUTTERMILK MARINADE:
- 2 cups buttermilk
- 2 teas salt
- 1 teas cayenne pepper
- 1 teas onion powder
- 1 teas ground black or white pepper
- 1 teas garlic powder
- 1 teas dried thyme
- FLOUR & CORNMEAL COATING:
- 2 1/2 cups all pupsoe flour
- 1/2 cup yellow cornmeal
- 2 tblsp salt
- 2 teas ground black or white pepper
Cinnamon Roll Pumpkin Vanilla Sheet Cake

1. Preheat oven to 350 degrees F
- 1 box yellow cake mix
- 4 eggs
- 1/2 cup canola or vegetable oil
- 1/2 cup milk or buttermilk
- 3.4 ounce box Vanilla Instant Pudding Mix
- 1/2 cup sour cream
- 15 ounce can pumpkin
- 1 stick (8 tablespoons) unsalted butter
- 3/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 3/4 cups powdered sugar
- 1/4-1/2 cup heavy cream (start w 1/4 cup and add a little more cream if needed)
Chili Relleno Bake

1. Preheat oven to 350. Lightly grease a 13x9 inch baking dish
- 1 pound ground chuck
- 1 pound ground sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup salsa
- 5 (4oz) cans whole chilies drained
- 2 cups shredded monterey jack cheese with peppers
- 2 cups shredded sharp cheddar cheese
- 1/3 cup yellow cornmeal
- 4 large eggs
- 1/4 cup all purpose flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon hot sauce

1. Preheat the oven to 350
- 2 cups old fashioned rolled oats
- 1 cup salted or unsalted sunflower seeds
- 2 tablespoon toasted wheat germ
- pinch of salt
- 1/2 cup honey
- 6 tablespoons vegetable or canola oil
- 1/4 cup pure maple syrup
- 1/2 teaspoon pure vanilla extract

These pumpkin spice macarons are sure to impress
- 1 1/2 cups finely ground almonds
- 1 1/4 cups powdered sugar
- 1 teaspoon pumpkin pie spice or apple pie spice
- 3 egg whites
- 1/2 teaspoon vanilla

- 1/4 cup granulated sugar
- 8 drops yellow food coloring
- 2 drops red food coloring

1. Center a rack in the oven and preheat the oven to 350
- 1 3/4 cups all purpose flour
- 1 tbslp baking pwoder
- 1/2-1 teas salt
- 1/4 teas freshly ground white pepper
- 3 large eggs, at room temp
- 1/3 cup whole milk, at room temp
- 1/3 cup extra virgin olive oil
- 1 generous cup coarsely grated gruyere, comte, emmenthal or cheddar
- 2 oz gruyere, comte, emmenthal, or cheddar, cut into very small cubes (1/2-2/3 cup)
- 1/2 cup minced fresh chives or other herbs
