- 4 oz (125g) dark muscovado sugar
- 6 oz (175g) golden syrup
- 3 1/2 oz (100g) butter
- 1/4 pint (150ml) milk
- 2 eggs, beaten
- 9 oz (275g) plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons ground ginger

- 2/3 cup whole rolled oats
- 1/4 cup pecans, roasted and hand crushed
- 1 1/2 teaspoons flaxseed

- 1/2 cup whole wheat flour
- 1 1/2 tablespoons turbinado sugar
- 1 tablespoon millet meal
- 1 1/2 teaspoons cornmeal

- 1 cup soy milk

Pozole Verde

Green Pozole with Chicken
- SALSA VERDE:
- 2 chicken breasts
- 1 head garlic, washed and halved horizontally
- 1 white onion, peeled and halved, with root end intact
- 1 tablespoon kosher salt
- 1 tablespoon whole cumin seeds
- 1 (28oz) can white hominy an dliquid
- 4 cups caldo de pollo
- 5 cups water
- 4 sprigs fresh epazote, or 6 sprigs fresh cilantro
- 1/2 cup raw pepitas (pumpkin seeds)
- 6 to 8 tomatillos, husked and washed (1/2lb)
- 1 cup diced white onion
- 1 clove garlic, peeled
- 2 serrano chiles, stemmed
- 1 bunch fresh cilantro, leaves and small stems, coarsely chopped
- 2 teaspoons fresh lard or vegetable oil

- 1/2 plus 1/4 tsp ground cinnamon, divided
- 2 tsp. butter, melted
- 1/2 cup packed brown sugar
- 1/4 cup butter
- 3 tblsp water
- 2 tblsp light colored corn syrup
- 1/2 plus 1 tsp vanilla, divided
- 1/4 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 tsp. baking powder
- 1/2 tesp. salt
- 1/4 tsp. cream of tartar
- 1 egg
- 1/2 cup milk
- 1 1/4 cups all purpose flour
Chicken and Apple Balls

- 2 teas light olive oil
- 1 onion, finely chopped
- 1 large granny smith apple, peeled and grated
- 2 chicken breast fillets, cut into chunks
- 1/2 tblsp fresh parsley, chopped
- 1 tblsp fresh thyme or sage, chopped (or a pinch mixed dried herbs)
- 1 chicken bouillon cube, crumbled(from one year)
- 1 cup fresh white bredcrumbs
- salt and freshly ground pepper (from one year)
- All purpose flour for coating
- vegetable oil for frying
