Herb and Onion Stuffing

This classic stuffing is also good made with six cups of cubed cornbread in place of six cups of the pain rustique
- 1/2 cup unsalted butter
- 3 cups chopped onions
- 2 cups chopped celery
- 1/4 cup chopped fresh italian parsley
- 2 tblsp chopped fresh sage
- 2 tblsp chopped fresh marjoram
- 12 cups 1 inch cubes day old pain rustique or ciabatta bread with crust
- 2 large eggs
- 1 1/2 teas fine sea salt
- 1 teas coarsely ground balck pepper
- 1 cup low salt chicken broth
Roasted Beet and Quinoa Salad

- FOR DRESSING:
- 1 shallot diced
- 1 teaspoon dijon mustard
- 3 tablespoons white wine or champagne vinegar
- 1/4 cup olive oil
- FOR SALAD:
- 3 medium beets, peeled and chopped into small chunks (about 1 1/2 cups)
- 1 teaspoon of whatever vinegar you used for the dressing
- 2 teaspoons olive oil
- salt and ground pepper
- 2 cups water
- 1 cup quinoa, rinsed
- 1 cup kale, stems removed, sliced into thin strips
- 1/4 cup diced fresh herbs (dill, basil, or parsley)
Crockpot Healthy Mama Barbecue Chicken

Dump everything into two, one gallon freezer bags, shake it up, seal, label and put in the freezer
- 3 medium unpeeled sweet potatoes, cut into 1/2 inch pieces
- 2 large green pepper, cut into strips
- 1 large red pepper, cut into strips
- 1 zucchini, chopped
- 1 medium onion, sliced
- 1 tablespoon quick cooking tapioca
- 2 pounds chicken thighs or drumsticks
- 1 8-ounce can of tomato sauce
- 2 tablespoons packed brown sugar
- 1 tablespoons Worcestershire sauce
- 1 tablespoon yellow mustard (I wasn’t sure if this meant actual mustard or the spice so I did a little of both)
- 1 clove garlic, minced
- 1/4 teaspoon salt
Lemon Cream Bonbons

1. In a large bowl, beat the cream chees,e lemon juice, peel, and extract
- 2 (8oz) pkgs cream cheese, softened
- 3 tablespoons lemon juice
- 2 tablespoons grated lemon peel
- 1 teaspoon lemon extract
- 1 cup confectioners' sugar
- 1 pound dark chocolate candy coating, melted
- 4 oz white candy coating, melted
Neil's Pancakes

Avoid overmixing!
- 4 cups all purpose flour
- 1 tblsp baking powder, plus 1 teas
- 3/4 cup sugar
- 1 teas salt
- 6 large eggs, separated
- 3 cups whole milk
- 3/4 cup unsalted butter, melted, plus 2 teas unmelted for the griddle
- 1 teas vanilla extract
- 2 1/2 cups blueberries or sliced bananas and 1 cup chopped walnuts
- 1/2 cup confectioners' sugar or cinnamon sugar for dusting

1. Preheat oven to 350. Beat butter at medium speed with an electraic mixer until cream
- FOR FROSTING:
- 1 cup butter, softened
- 2 1/2 cups sugar
- 6 large eggs
- 3 cups all purpose flour
- 3 tbsp. unsweetened cocoa
- 1/4 tsp. baking soda
- 1 (8oz) container sour cream
- 2 tsp. vanilla extract
- 2 (1oz) bottles red foor coloring
- 1 1/2 recipes cream cheese frosting
- 2 (8oz) pkgs. cream cheese, softened
- 1/2 cup butter, softened
- 1 (32oz) package powdered sugar
- 2 tsp. vanilla extract
White Chocolate Raspberry Truffles

1. In a small bowl, beat cream cheese until smooth
- 1 (8oz) pkg cream cheese, softened
- 1 cup vanilla baking chips or chocolate chips, melted
- 3/4 cup crushed vanilla wafers
- 1/4 cup seedless raspberry preserves
- 2/3 cup finely chopped almonds, toasted
