Tomato Tart

Roll out pastry on a lightly floured surface
- 2 sheets frozen puff pastry, thawed
- 2 egg yolks
- 2 tsp corn oil
- 2 tsp water
- 4 medium tomatoes, sliced 1/4" thick
- 1/2 tsp olive oil
- 1/2 tsp sugar
- black pepper
- 1/2 cup pesto (optional)
Salmon, poached with grapefruit salsa

In a large skillet, combine broth ingredients
- Broth:
- 5 cups strong green tea
- 4 fresh basil sprigs
- 4 fresh thyme sprigs
- 4 fresh cilantro sprigs
- 3 TB lemon juice
- 3 TB minced fresh gingerroot
- 4 salmon fillets, 4 oz each
- Salsa:
- 1 large pink grapefruit, sectioned and chopped
- 4 green onions, thinly sliced
- 1 TB minced fresh cilantro
- 1 TB finely chopped crystallized ginger
- 1/4 tsp salt
Salsa with Roasted Tomatoes

Arrange six tomatoes cut side down on a 15x10x1 baking pan; drizzle with oil
- 12 large tomatoes, halved and seeded, divided
- 1 bunch fresh cilantro, trimmed
- 1/4 cup lime juice
- 2 TB olive oil
- 4 garlic cloves, peeled
- 2 tsp grated lime peel
- 1 large sweet yellow pepper, finely chopped
- 12 green onions, thinly sliced
- 1 TB each ground cumin, smoked paprika and chipotle pepper
- 2 tsp salt
- 1/4 tsp hot sauce
- 6 jalapeno peppers, minced (optional)
Thumbprints with Pistachios

Cream together butter and sugar
- Cookie:
- 1 cup butter, softened
- 1/3 cup powdered sugar
- 1 egg
- 3/4 tsp almond extract
- 3 oz pkg instant pistachio pudding mix
- 1 tsp vanilla
- 2 cups flour
- 1/2 cup mini chocolate chips
- 2 cups finely chopped pecans or pistachios
- Filling:
- 2 TB soft butter
- 1 tsp vanilla
- 2 cups powdered sugar
- 2-3 TB milk
- Glaze:
- 1/2 cup chocolate chips
- 2 tsp shortening

- 1 cup vinegar
- 2 cups oil
- 8 saccharine tablets
- 1 tsp salt
- 1 TB each garlic powder and chopped onion
- dash Tabasco
- Paprika
Stuffed Shells

Cook pasta in boiling salted water until slightly less than al dente
- 8 manicotti or 16+ large shells, cooked al dente
- 1 TB olive oil
- 2 garlic cloves, minced
- 2 TB italian parsley, minced
- 16 oz ricotta cheese
- 2 eggs
- 1/2 tsp each salt and pepper
- tomato sauce
- grated Parmigiano-Reggiano, for garnish

- 3/4 pound orzo pasta (rice-shaped pasta)
- 1/2 cup freshly squeezed lemon juice (3 lemons)
- Freshly ground black pepper
- 2 pounds (16 to 18 count) shrimp, peeled and deveined
- 1 cup minced scallions, white and green parts
- 1 cup chopped fresh dill
- 1 cup chopped fresh flat-leaf parsley
- 1 hothouse cucumber, unpeeled, seeded, and medium-diced
- 1/2 cup small-diced red onion
- 4 oz good feta cheese, large diced
