Zucchini Cakes

Place grated zucchini in a colander; sprinkle lightly with salt and let stand 30 minutes
- 3 C coarsely grated zucchini
- 1/2 tsp salt
- 1 C breadcrumbs
- 1 egg
- 2 green onions, thinly sliced
- 1/4 C red bell pepper, diced
- 1 1/2 tsp Old Bay seasoning
- 1 tsp Dijon mustard
- 1 T mayo or plain yogurt
- 1/8 tsp red pepper flakes
- 2 T vegetable oil, for frying
- 1 tsp butter
Apple Kuchen

- Kuchen:
- 1 1/4 cups flour
- 1/4 cups sugar
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup cold butter, cut into small pieces
- 2 egg yolks
- 2 tsp milk
- 1/4 tsp vanilla extract
- 3-4 apples, peeled, cored and sliced
- Streusel:
- 3/4 cup sugar
- 2 TB flour
- 1/4 - 1/2 tsp cinnamon
- 2 TB butter, cut into small pieces
Peanut and Pretzel Bark

Melt coating over double boiler on low heat
- 1 1/2 lbs vanilla flavored candy coating
- 1 1/2 cup broken thin pretzels (or dried cranberries)
- 1/2 cup coarsely chopped peanuts (or pecans or pistachios)
- optional: finely chopped candy canes
Cinnamon Rolls, Potato

- Filling:
- 2 pkg dry yeast
- 1/2 cup warm water (about 110 degrees)
- 2 cups warm whole milk, scalded
- 1/2 cup butter
- 7 cups flour
- 1/2 cup sugar
- 1 cup mashed potatoes (leftover or instant)
- 2 eggs, beaten slightly
- 2 tsp salt
- 3/4 cup melted butter
- 1 cup brown sugar mixed with 2 tsp cinnamon (may double this)
- 1/2 cup raisins (optional)
- 2/3 cup nuts (optional)
- Icing:
- 8 oz cream cheese
- 1/2 cup butter
- 2 cups powdered sugar
- 1 tsp vanilla
Figgy Oatmeal Bars

Preheat oven to 375. Place figs, dates and almonds in a food processor and grind to a coarse paste
- Filling:
- 8 oz dried figs
- 4 oz dates, pitted
- 2 TB slivered or chopped almonds
- 1 TB maple syrup
- 2 TB water
- 1 TB lemon juice
- 1/4 tsp cinnamon
- Crust:
- 1 cup regular or quick oats, ground in blender til fine
- 1 cup regular oats
- 1 tsp baking powder
- 1/4 tsp salt
- 3 TB maple syrup
- 4 oz unsweetened applesauce
- 1/4 cup water
Chicken Salad, Herbed

Combine first 5 ingredients
- 1 TB finely chopped tarragon
- 3 TB canola mayonnaise
- 3 TB plain Greek yogurt
- 1 TB fresh lemon juice
- salt
- 2 C cooked chicken, skinless
- 1/4 C onion, minced
Salsa Bites

Preheat oven to 350. In large bowl, beat cream cheese until smooth
- 8 oz cream cheese, softened
- 1/3 cup thick and chunky salsa
- 2 eggs, lightly beaten
- 1/2 cup shredded cheddar cheese
- 2 TB chopped ripe olives
- 1 TB chopped green onion
- 1 garlic clove, pressed
- Optional: more salsa for topping
Ginger Cookies

Preheat the oven to 350 degrees F
- 3/4 cup vegetable shortening
- 1 cup sugar, plus more for rolling
- 1 large egg
- 1/4 cup molasses
- 2 cups sifted all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
Parmesan Popovers

Preheat oven to 400. In a blender, combine eggs, flour, seasonings and parsley
- 6 eggs
- 1 1/2 cups flour
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp herbes de Provence
- 1/4 cup chopped italian parsley
- 2 cups whole milk
- 1 1/4 cups grated Parmesan cheese (5 oz)
Vinaigrette, Citrus

- 1/2 cup olive oil
- 1 tsp each lemon zest and orange zest
- 2 TB lemon juice
- 1 TB orange juice
- 1 tsp thyme leaves, chopped
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
