Spinach Quiche with Herb and Quinoa Crust

Preheat oven to 350. Mix together all crust ingredients
- Crust:
- 1 cup cooked quinoa
- 2 TB quinoa or whole-wheat flour to bind
- 2 TB flaxseed
- small bunch basil and thyme, finely chopped
- salt and pepper to taste
- Filling:
- 1 package firm tofu, drained
- jiuce of 1 lemon
- 10 oz fresh spinach
- 1 clove garlic, minced
- 1/2 tsp turmeric (for color)
- 1/2 tsp sea salt
- 1/2 tsp nutmeg
- 1/4 cup nutritional yeast
- 1 TB Dijon mustard
- 1/4 cup roasted pine nuts
Cookies, Triple Chocolate

Preheat oven to 350. In a medium bowl sift together dry ingredients and set aside
- 2 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 2 sticks butter, room temp
- 1 cup brown sugar
- 3/4 cup white sugar
- 1 tsp vanilla
- 1 egg, beaten until yellow
- 6 oz milk chocolate chips
- 3 oz bar dark chocolate, diced
- 6 oz white chocolate chips
Strawberry Julius

Combine all ingredients except ice in blender and blend on high for 15-20 seconds or until sugar is dissolved
- 1 cup frozen sliced strawberries, thawed (10 oz box)
- 1 cup water
- 3 TB egg substitute
- 1 tsp vanilla
- 1/4 cup sugar
- 1 1/2 cups ice
Chicken with Stove Top

Mix hot water, butter and stuffing mix
- 1 1/2 cups hot water
- 1/2 stick butter, melted
- 6 oz pkg Stove Top stuffing mix
- 6 pieces of chicken (@ 1 1/2 lb)
- 10 3/4 oz can cream of mushroom soup
- 1/3 cup sour cream
Broccoli Salad

Combine dressing ingredients in large bowl
- Dressing:
- 4 cups raw broccoli
- 1/2 cup red onion
- 1 cup seedles grapes
- 6 slices cooked bacon, crumbled
- 1/3 cup sunflower seeds
- 1 cup mayo
- 2 TB red wine vinegar
- 1/3 cup sugar
Lemon Coconut Squares

Preheat oven to 350. Mix crumbs, 1/4 cup sugar, and butter until well blended
- 1 1/3 finely crushed Nillas
- 1 cup sugar, divided
- 1/4 cup butter, melted
- 1 tsp grated lemon peel
- 2 eggs
- 1/4 cup lemon juice
- 2 TB flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup coconut
Tuna Patties

Combine all ingredients. Shape into 3 or 4 patties
- 1 can tuna (water pack)
- 1 roll saltines (1 1/2 cups crumbs)

Cranberry Pecan Bark

Melt almond bark on low heat, stirring frequently
- 1 1/2 lbs almond bark
- 1 1/4 cups pecans
- 1 cup cranberries
Tuna marinade and pineapple salsa

Combine marinade ingredients in a plastic bag
- Marinade:
- 1/2 cup tequila (or chicken broth)
- 3 TB brown sugar
- 2 TB lemon or lime juice
- 1 TB olive oil
- 1 tsp salt
- sprinkle of chili flakes
- 4 tuna steaks (6 oz)
- Pineapple salsa:
- 1 cup chopped pineapple
- 1 plum tomato, chopped
- 1/3 cup onion, finely chopped
- 1/4 cup cilantro, minced
- 2 TB jalapeno pepper (optional)
- 2 TB lemon or lime juice
- 1 TB olive oil
- 2 tsp grated lemon or lime zest
- 1/2 tsp salt
Hamburger Soup

Brown meat. Add onion and garlic
- 1/2 lb. ground beef
- 1/2 cup onion, chopped
- 1 garlic clove, minced
- 5 cups water
- 14 oz can diced tomatoes with juice
- 3/4 cup quick cooking barley
- 1/2 cup each celery and carrots
- 2 cups beef stock
- 1/2 tsp basil, dried
- 1 bay leaf
- 9 oz bag frozen veggies, optional
