Pork Tenderloin with Fig, Prosciutto and Sage

Preheat oven to 350. Cut a pocket along the length of the pork, almost going through to the other side
- 1 pork loin, around 1 1/2 lbs
- 1/2 stick butter
- 6 dried figs
- 4 slices prosciutto
- 1 clove garlic
- 8 fresh sage leaves or about 1 teaspoon if using dried
- salt and pepper to taste
- 1 TB Dijon mustard
- 2 TB honey
- olive oil
Pasta with Prosciutto and Asparagus

Discovered this recipe at the Farmers Market in Yuma when I purchased roasted garlic linguine
- 1 lb pasta
- 1 1/2 lbs asparagus, cut diagonally
- 1 TB olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp balsamic vinegar
- 2 oz prosciutto, chopped
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 cup freshly grated Parmesan cheese
Giblet Stock

Use this in gravy or in Cranberry Italian Sausage Stuffing
- Giblets (heart, gizzard, liver) and neck from turkey
- 4 TB butter
- 1 onion, peelied and cut into 1/4 inch dice
- 1 celery stalk with leaves, cut into 1/4 inch dice, leaves roughly chopped
- salt and pepper

- 1 1/4 tsp flour
- 2 tsp baking powder
- 1/4 cup sugar
- 1/4 tsp salt
- 3/4 cup cornmeal
- 2 eggs
- 1/4 cup oil
- 1/2 cup milk
- 3 TB honey or maple syrup
- 1/2 cup corn
- 1 cup grated sharp cheddar cheese

- 1/2 stick butter, melted, plus more for the pan
- 1 1/4 cups flour, spooned and leveled
- 3/4 cup cornmeal
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 2 large eggs
- 1 cup buttermilk
- 1/3 cup honey
Caramelized Shallots

Preheat the oven to 400 degrees F
- 6 tablespoons (3/4 stick) unsalted butter
- 2 pounds fresh shallots, peeled, with roots intact
- 3 tablespoons sugar
- 3 tablespoons good red wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh flat-leaf parsley

- Streusel Topping:
- 6 medium apples
- 3/4 cup brown sugar
- 3 TB flour
- 1/2 tsp cinnamon
- salt
- pinch of nutmeg
- 1/2 cup frozen cranberries (optional)
- 1/2 cup each oats and brown sugar
- 1/4 cup whole wheat pastry flour
- 1/4 tsp each cinnamon and ginger
- 1/4 cup each toasted walnuts and chilled butter
