- 2 Large Onions, cut in half and sliced

- 3/4 LB Zucchini (may combine with yellow squash)

- 1 LB tomatoes (opt)
- 1 TB fresh Thyme
- Salt & Pepper to taste

Hazelnut Amaretto Balls

Spread 1 cup powdered sugar on a piece of waxed paper
- 2 cups powdered sugar
- 2 1/2 cups vanilla wafers, crushed
- 2 TB cocoa powder, unsweetened, sifted
- 1 cup hazelnuts, chopped
- 3 TB light corn syrup
- 1/4 Amaretto liqueur

Preheat oven to 350. Sift flours, baking powder, baking soda and cinnamon
- 1 cup each unbleached flour and whole wheat pastry flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 2 eggs
- 5 TB butter
- 1/4 cup buttermilk
- 1 tsp lemon juice
- 5 large, ripe bananas
- 1/2 cup sugar
- 1/4 tsp salt
- 1 cup nuts
