Candied Nuts

Heat oven to 400. Spread nuts on a rimmed baking sheet and toast, tossing once, until fragrant, 6-8 minutes
- 2 cups unsalted mixed nuts
- 3/4 cup granulated sugar

Cran-Orange Bread

Use fresh/frozen cranberries for a tart loaf or canned berries for a sweeter loaf
- 3 cups unbleached flour
- 3/4 cup sugar
- 1 TB baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 cup orange juice
- 1/2 cup butter
- 2 eggs
- 1 1/4 cup cranberries
- 2 tsp orange zest
- 1/2 cup nuts, chopped
Mom's Lasagna

This is the lasagna we remember Mom making when we were growing up
- Ricotta filling:
- Lasagna noodles
- Spaghetti sauce
- 6 hard cooked eggs
- 1/2 lb diced ham
- 1 lb small, cooked meatballs
- Mozzarella cheese
- 2 cartons ricotta cheese
- 1 egg
- Dried basil and oregano
Fish and Pesto Sandwiches

Preheat oven to 350. Put pesto ingredients in a blender and whiz until ground
- Pesto:
- 2 cups fresh basil, packed
- 1/2 cup grated Parmesan or Romano cheese
- 1/2 cup olive oil
- 1/3 cup pine nuts or walnuts
- 3 medium-sized garlic cloves, minced
- salt and pepper to taste
- Sandwich:
- zest of 1 lemon
- 4 tilapia or cod fillets
- 1 pack prosciutto
- 4-5 bunches cherry tomatoes on the vine
- 5 sun dried tomatoes
- 2 garlic cloves, finely sliced
- 1/2 cup black olives
- 1 chili pepper, finely sliced
Praline Pumpkin Rice Pudding

Reserve 2 TB evaporated milk; set aside for topping
- 12 oz can evaporated milk, divided
- 3 C cooked short or medium grain white rice
- 1 C canned pumpkin
- 3/4 C brown sugar, divided
- 1 tsp pumpkin pie spice
- salt
- 1 TB butter
- 2/3 C coarsley chopped pecans

For the pastry: Preheat oven to 350
- Pastry:
- 1 stick unsalted butter
- 1 stick unsalted margarine
- 1 cup sugar
- 3 large eggs
- 1 tsp almond extract
- 1/2 cup milk
- 3 1/4 - 3 1/2 cups flour
- salt
- 5 tsp baking powder
- Icing:
- 1/2 lb confectioners sugar
- 2 TB butter
- 1 TB milk, more if needed
- almond flavoring to taste
- food coloring, if desired
- coconut, for dipping
Mushroom, Sausage and Spinach Lasagna

Preheat oven to 350. Coat a 9x13 glass baking dish with cooking spray
- 8 ounces lasagna noodles, preferably whole-wheat (see Ingredient note)
- 1 pound lean spicy Italian turkey sausage, casings removed (see Variation)
- 4 cups sliced mushrooms (10 ounces)
- 1/4 cup water
- 1 pound frozen spinach, thawed
- 1 28-ounce can crushed tomatoes, preferably chunky
- 1/4 cup chopped fresh basil
- Salt & freshly ground pepper to taste
- 1 pound part-skim ricotta cheese (2 cups)
- 8 ounces part-skim mozzarella cheese, shredded (about 2 cups), divided
Chicken, Oven Fried

Preheat oven to 350. Place butter in baking dish or 9x13 cake pan
- 1/2 cup butter
- 1 cup flour
- 2 TB garlic powder
- 1 TB onion powder
- 1 TB salt
- 1 tsp pepper
- 1 TB fresh lemon zest
- 1 roasting chicken, rinsed and cut into pieces
Brownies, from scratch

Combine all ingredients until well mixed
- Optional:
- 1 cup sugar
- 1/2 cup flour
- 1/3 cup cocoa
- 1/4 tsp each salt and baking powder

- 6 stalks celery, finely diced
- 2 medium onions, finely diced
- 1 loaf French bread, cut into small cubes (@ 10 cups)

- 3/4 lb sweet Italian sausage - casings removed, cooked and crumbled
- 3/4 cup flat-leaf parsley
- 1 tsp each kosher salt and black pepper
