Apple Strudel

Preheat oven to 350 degrees F
- 2 tablespoons dark rum
- 1/2 cup raisins
- 2 to 3 Granny Smith apples, peeled, cored, halved, and sliced 1/8-inch thick
- 1/2 lemon, juiced
- 1 teaspoon cinnamon
- 1/2 cup sugar, plus 1/4 cup, for sprinkling
- 5 sheets phyllo dough
- 2 egg whites
- 2 teaspoons extra-virgin olive oil
- 1/4 cup panko bread crumbs
- 1/4 cup chopped almonds
- Cinnamon, for garnish
- Powdered sugar, for garnish
- Caramel sauce, for garnish (store-bought)

Preheat oven to 400. In a medium bowl sift together flour and spices
- Topping:
- 1 cup shortening
- 1 1/2 cup sugar
- 2 eggs
- 2 3/4 cup flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt
- 2 TB sugar
- 2 TB cinnamon
Caramel Apple Cake

Preheat oven to 350 degrees F
- Cake:
- 3 cups all-purpose flour
- 1 1/3 cups sugar, plus 1/4 cup for the apples
- 1 1/2 teaspoons ground apple or pumpkin pie spice blend
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon fine salt
- 4 large golden delicious apples, peeled, cored, and roughly chopped (about 5 cups)
- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- Finely grated zest from 1 orange
- Juice of 1 orange (about 1/3 cup)
- 1 tablespoon pure vanilla extract
- Caramel Glaze:
- 1/2 cup sugar
- 1 tablespoon light corn syrup
- 2 tablespoons water
- 1/2 cup heavy cream
- 3/4 cup pecans, toasted and roughly chopped
- 1/2 teaspoon pure vanilla extract
- Pinch salt
- Special equipment: 10 cup bundt pan

In a bowl or jar with a tight fitting lid combine cider, vinegar, honey, cinnamon, oil, salt and pepper
- 2 cups apple cider
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1 cinnamon stick
- 2 cups grapeseed or salad oil
- Salt
- Freshly ground black pepper
- 6 cups loosely packed mixed torn greens such as romaine, red or green leaf lettuce, or radicchio, washed and dried
- 2 cups assorted berries: blueberries, raspberries and blackberries
- 2 Granny Smith apples, cored and sliced
- 1 1/2 cups crumbled blue cheese
Strawberry Pretzel Squares

- 2 cups finely crushed pretzels
- 1/2 cup sugar, divided
- 2/3 cup butter, melted
- 12 oz cream cheese, softened
- 2 TB milk
- 1 cup thawed Cool Whip
- 2 cups boiling water
- 6 oz strawberry jello
- 1 1/2 cups cold water
- 1 quart fresh strawberries, sliced

- 6 oz evaporated milk
- 1 2/3 cup sugar
- 1/2 tsp salt
- 1/2 cup chopped nuts
- 1 1/2 cups diced marshmallows or peanut butter
- 1 1/2 cups semisweet chocolate pieces
- 1 tsp vanilla

- 1/2 cup brown sugar
- 2 eggs
- 3/4 cup sour cream
