  • 1 1/4 tsp flour
  • 2 tsp baking powder
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 3/4 cup cornmeal
  • 2 eggs
  • 1/4 cup oil
  • 1/2 cup milk
  • 3 TB honey or maple syrup
  • 1/2 cup corn
  • 1 cup grated sharp cheddar cheese
  • optional: bacon bits, chilis, or sundried tomatoes



Step 1

Preheat oven to 350. Prepare 9" cake pan or muffin tin by spraying with Pam.

Mix first 5 ingredients in a medium bowl. Whisk eggs in a large bowl, then add oil, milk, and honey or syrup. Stir dry ingredients into egg mixture until smooth. Carefully fold in corn, cheese, and any optional ingredients.

Pour batter into baking pan. Garnish with extra cheese.

Bake for 20-25 minutes until golden brown on top.
