- 2 eggs
- 2 tsp sugar
- 1 Cup milk
- 1 Cup flour
- 1/2 tsp Salt
- 1 TB lemon extract

Date Bars

In a medium-sized pan combine dates and orange juice
- Topping:
- 8 oz pkg pitted dates, coarsely chopped
- 1 1/2 cups orange juice
- 2 1/2 cups flour
- 1 1/2 cups brown sugar
- 1/2 tsp salt
- 3 sticks butter, softened
- 2 cups oats, uncooked
- 1 cup coconut
- 1 cup nuts, chopped
- 1/2 cup coconut
Panettone

In a medium bowl, combine yeast, water and sugar
- 1 pkg active dry yeast
- 1 cup warm water (110 degrees)
- 1/4 cup sugar
- 2 eggs
- 1/2 cup plain yogurt
- 1 tsp vanilla
- zest of one lemon
- 1/4 tsp salt
- 4 cups unbleached flour
- 1/2 mixed dried fruit (cranberries, currents, raisins)
- 1 TB confectioners sugar
- 1 TB butter, melted (optional)
Banana Date Nut Muffins

Preheat oven to 350. Combine all ingredients
- 1 cup ground flax seed
- 1 cup sugar
- 2 eggs
- 1/2 cup buttermilk, sour cream or yogurt
- 2 cups mashed bananas
- 2 cups flour
- 1 tsp soda
- 1/2 cup each chopped nuts and dates or raisins
Broccoli, Parmesan and Lemon

Preheat the oven to 400 degrees F
- 3 heads broccoli (about 3 pounds)
- 3 tablespoons olive oil
- Salt and freshly ground black pepper
- 1 cup freshly grated Parmigiano-Reggiano
- 1 lemon, juiced
Peas and Prosciutto

Heat oil in a heavy large skillet over medium-low heat
- 2 TB olive oil
- 3 shallots, chopped
- 2 garlic cloves, minced
- salt and pepper
- 1 lb bag frozen peas, thawed
- 4 oz prosciutto, diced
- 1/4 cup Italian parsley, chopped
Bran Flax Muffins

Mix first 8 ingredients (through cinnamon) in a large bowl
- 1 1/2 cups unbleached flour
- 3/4 cup flaxseed meal
- 3/4 cup oat bran
- 1 cup brown sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 1/2 cups shredded carrots
- 2 apples, shredded
- 1/2 cup raisins
- 1 cup nuts
- 3/4 cup milk
- 2 eggs, beaten
- 1 tsp vanilla
Shrimp Louie Spread

Mix cream cheese and mayo
- 8 oz cream cheese, softened
- 1/2 cup mayo
- 1/4 cup chili sauce
- 1 TB horseradish
- 1/8 tsp pepper
- 6 green onions
- 2 cups finely chopped cooked salad shrimp

Cranberry-Orange Spice Cookies

On waxed paper, combine flour, baking soda and salt
- Basic dough:
- 2 3/4 cups unbleached flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 sticks butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla
- Add ins:
- 1/2 cup dried cranberries, finely chopped
- 1/4 cup crystallized ginger, finely chopped
- 2 tsp orange zest
- 1 tsp pumpkin pie spice
Peanut Butter Surprise

Using an electric mixer, cream the butter, peanut butter, and sugars in a bowl until light and fluffy
- 2 sticks butter, softened
- 1 1/4 cups creamy peanut butter (not sugarless)
- 1 cup granulated sugar plus 1/2 cup, for dusting
- 1 cup brown sugar, firmly packed
- 2 large eggs, lightly beaten
- 2 tsp vanilla
- 2 cups flour
- 1 tsp each baking powder & baking soda
- 1/4 tsp salt
- 1 cup semisweet or bittersweet chocolate chips
