1. Preheat oven to 400F. 2
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon sugar
- 2 cups unprocessed wheat bran
- 2 eggs, beaten
- 1/2 cup molasses
- 1/2 cup skim milk
- 1/2 cup apple butter
Zuppa Toscana

Chop or slice uncooked sausage into small pieces
- 1 lb Italian sausage (I like mild sausage)
- 1/4 tsp red pepper flakes
- 2 large russet baking potatoes, sliced in half, and then in 1/4 inch slices
- 1 large onion, chopped
- 1/4 cup bacon bits (optional)
- 2 garlic cloves, minced
- 2 cups kale or 2 cups swiss chard, chopped
- 1 TBS Chicken stock
- 2 quart water
- 1 cup heavy whipping cream
Bountiful Brunch Pizza

Preheat oven to 400 degrees
- Crust:
- 1 pkg. frozen shredded hash brown patties (24 ounces) thawed
- and broken apart
- 1 egg, beaten
- salt and ground black pepper to taste
- Egg Topping:
- 7 eggs
- 1/2 cup milk
- Salt and ground black pepper to
- taste(optional)
- 1 cup chopped ham
- 1/2 cup sliced fresh mushrooms
- 1/4 cup green onion slices
- 1/4 cup chopped green bell pepper
- 1 1/2 cups shredded cheddar cheese. (6 ounces)

Mix the butter and sugar together and beat then with a mixer until fluffy
- 1 cup butter, softened
- 2 2/3 cups white sugar
- 3 eggs
- 1 cup molasses
- 2 tablespoons vinegar
- 2 tablespoons baking soda
- 4 teaspoons ginger
- 1 teaspoon cinnamon

- 1/2 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup butter
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup milk or buttermilk
- 1 1/2 cup fresh blueberries
- 1/4 cup confectioners' sugar for dusting
Spinach Quiche

- 1 pie crust (9 inch)
- 1 Tablespoon dijon mustard
- 2 Tablespoons minced onion
- 2 Tablespoons butter
- 1 package chopped spinach
- dash pepper
- dash nutmeg
- 1 cup ricotta cheese
- 3 eggs
- 1/2 cup cream
- 1/4 cup swiss , shredded

Carrot Muffins

Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven
- 1/2 cup (50 grams) pecans or walnuts, toasted and coarsely chopped
- 2 cups (270 grams) grated raw carrot (about 2-3 peeled carrots)
- 1 large apple, peeled and grated
- 2 cups (260 grams) all-purpose flour
- 1 1/4 cups (250 grams) granulated white sugar
- 3/4 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon (3.5 grams) salt
- 1 1/2 teaspoons ground cinnamon
- 1 cup coconut (sweetened or unsweetened) (optional)
- 3 large eggs
- 3/4 cup (180 ml) safflower, corn, or canola oil
- 1 teaspoon pure vanilla extract
- Cream Cheese Frosting: (optional)
- 1/4 cup (56 grams) unsalted butter, room temperature
- 4 ounces (1/2 cup) (110 grams) cream cheese, room temperature
- 3 tablespoons confectioners' (powdered or icing) sugar

- 2 cans Chicken Stock
- 2 Cans Beef Stock
- 1 head cauliflower
- 4 tablespoons butter
- 1 onion, finely chopped
- 1/3 cup flour
- 1 tablespoon worcestershire sauce
- 1/2 gallon skim milk
- 8 ounces part skim milk mozzarella cheese, grated
- 4 ounces sharp cheddar cheese, grated
Basic Pancakes

- 2 cups all-purpose flour, stirred or sifted before measuring
- 2 1/2 teaspoons baking powder
- 3 tablespoons granulated sugar
