Ingredients

  • 1 pie crust (9 inch)
  • 1 Tablespoon dijon mustard
  • 2 Tablespoons minced onion
  • 2 Tablespoons butter
  • 1 package chopped spinach
  • dash pepper
  • dash nutmeg
  • 1 cup ricotta cheese
  • 3 eggs
  • 1/2 cup cream
  • 1/4 cup swiss , shredded
  • 1/2 teaspoon salt

Preparation

Step 1

Brush cooled pastry shell with mustard. Saute onions in butter. Add spinach and stir over moderate heat to evaporate moisture. Stir in salt, pepper, nutmeg and ricotta. Taste for seasoning. Blend in eggs and cream. Pour into pastry shell. Sprinkle with cheese. Dot with 1 TBS of butter. Bake at 375F for 25-30 minutes or until set.
