- 1 * 1 pork belly
- * Few tablespoons honey

- 2 * 2 cups procuitto
- 1/2 * 1/2 cup onion
- 1/2 * 1/2 cup celery
- 1/4 * 1/4 cup fennel
- 4 * 4 roma tomatoes
- 1/2 * 1/2 cup sherry
- 2 * 2 cups chicken stock
- 1 * 1 cup veal stock
- 1 * 1 bunch basil
- 1 * 1 pound broccoli
- 1 * 1 pound brussel sprouts
- * Grapeseed oil
Classic Thai Basil Chicken

1. Combine the stir-fry sauce ingredients together in a cup, stirring to dissolve the sugar
- # STIR-FRY SAUCE:
- # approx. 1 lb. (.45 kg) chicken breast or thigh, cut into thin strips for stir-frying
- # 1 shallot (or substitute 1/4 cup purple onion), finely chopped
- # 4 cloves garlic, minced
- # 2 red chilies, finely sliced (OR substitute 1/2 tsp. crushed dried chili)
- # 1 red bell pepper, chopped into bite-size pieces or strips
- # 3 Tbsp. sherry/cooking sherry, OR white wine
- # 1 compressed cup (2 oz./56 grams) fresh Thai basil (or substitute sweet basil)
- # Optional: 1/4 cup chicken stock, + 1 more Tbsp. lime juice
- # 2 Tbsp. oyster sauce (I use Golden Dragon brand)
- # 3 Tbsp. Golden Mountain sauce (see below)
- # 1 Tbsp. fish sauce
- # 1 Tbsp. brown sugar
- # 2 Tbsp. lime juice
- # OTHER: oil for stir-frying
chicken stroganoff

1. Toss the chicken with the paprika and a good pinch of salt and pepper
- 6 boneless skinless chicken thighs, rinsed, trimmed of excess fat and cut into bite-sized pieces

- 8 oz dry noodles (Lo Mein)
- 2 tablespoons ground peanuts
- 1 stalk scallion, cut into small rounds
- 5 tablespoons oil
- 2 tablespoons dried chili flakes
- 1/2 tablespoon Sichuan peppercorn
- Sauce:
- 1 tablespoon Chinese black vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 3 coves garlic, peeled and very finely minced
- 1/2 tablespoon white sesame seeds
- Salt to taste
