Smoky Beef Chili with Tortilla Chip Crust

Season the beef generously with salt and pepper
- 4 1/2 * 4 1/2 lb. beef chuck roast, cut into 1-inch cubes
- * Kosher salt and freshly ground pepper, to taste
- 5 * 5 Tbs. vegetable oil
- 3 * 3 large yellow onions, diced
- 2 * 2 carrots, peeled and diced
- 1 * 1 celery stalk, diced
- 2 * 2 red bell peppers, seeded and diced
- 10 * 10 garlic cloves, minced
- 2/3 * 2/3 cup chili powder
- 2 * 2 Tbs. ground cumin
- 1 * 1 Tbs. dried oregano
- 2 * 2 tsp. ground coriander
- 1 * 1 cup beef broth
- 2 * 2 cans (each 28 oz.) crushed tomatoes
- 1 * 1 can (15 oz.) kidney beans, rinsed and drained
- 1 * 1 can (15 oz.) black beans, rinsed and drained
- 1/4 * 1/4 cup finely ground cornmeal
- 8 * 8 oz. sharp cheddar cheese, shredded
- 3 * 3 cups tortilla chips
- * Guacamole for serving
- * Sour cream for serving
Stir-fried Pork with Black Bean Sauce

Marinate the pork slices/strips: Add a few spoonfuls of Shaoxing wine to the pork, just enough to moisten the pork
- pork loin or tenderloin, sliced thinly or cut into strips
- Shaoxing wine
- cornstarch
- 1-2 tomatoes, cut into wedges
- garlic cloves, as many as you like
- black bean and garlic sauce (Lee Kum Kee or other brand)
Lemon Linguine with Basil Pesto Shrimp

1. Place shrimp in a non-metal bowl or zip lock bag and spoon in half of the pesto to coat
- 1 pound large shrimp, peeled and deveined – with or without the tails
- 1 batch Basil Pesto (recipe follows)
- 1 pound linguine, cooked al dente
- 1/2 to 2/3 cup olive oil
- 1/4 to 1/2 cup fresh lemon juice (2-3 lemons)
- 1/2 cup Parmesan cheese
- 1 tablespoon fresh lemon zest
- 1 cup pasta cooking water
No-Churn Blueberry Cheesecake Ice Cream

In a small saucepan, combine blueberries and granulated sugar
- 1 1/2 cups blueberries, fresh or frozen
- 1/4 cup granulated sugar
- 1 teaspoon cornstarch
- 6 ounces cream cheese, room temperature
- 1/2 cup brown sugar
- 2 cups whipping cream, cold
- 2 teaspoons vanilla extract
Salted Caramel Sauce

1. Add the sugar in an even layer over the bottom of a heavy saucepan, with a capacity of at least 2 or 3 quarts
- 2 cups granulated sugar
- 12 tablespoons unsalted butter, at room temperature, cut into pieces
- 1 cup heavy cream, at room temperature
- 1 tablespoon fleur de sel (or any other flaky sea salt)
Corn and Chorizo Chowder

Gently cook the onion, chorizo and chilli in the butter for 4-5 minutes, until soft
- 1 large onion, peeled and finely chopped
- 120 g cooking chorizo, cut into 1/2cm cubes
- 1 very small green or red chilli, finely chopped (or some dried chilli)
- 60 g butter
- 1 tbsp flour
- 1.2 ltr hot chicken stock
- Corn from 2 cobs of corn or 1 x 250g can of sweetcorn
- 1 large potato, peeled and cut into rough 1cm cubes
- 2 tbsp chopped parsley (I sometimes use thyme or oregano)
- 60 ml double cream
Chicken-fried steak

Cut the top-round steak into four pieces
- 1 1/2 pounds of top-round steak
- 1 1/2 cups of flour
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 1/2 teaspoon cayenne
- 3 eggs, beaten
- 1/2 cup of milk or buttermilk
- Lard or vegetable oil for frying
- Cream gravy, for serving

- 1 boneless pork loin (i bought a 3 lb loin)
- salt/pepper to taste
- 1 tbl vegetable oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1/4 tsp cayenne
- 1/8 tsp grated nutmeg
- 1 tbl Guiness Mustard (or dijon mustard)
- 1 tsp minced garlic
- 1/2 cup water (or stock)
- splash of milk
- 1 tsp flour
Chicken with Tarragon Cream Sauce

(Serves 4) Melt the butter and oil in a large sauté pan with a lid
- 1 tablespoon unsalted butter
- 1 tablespoon safflower oil (I used vegetable oil)
- 1 free-range chicken, about 4 lbs, cut into 6-8 pieces (I used all chicken thighs and drumsticks)
- 2 carrots, chopped
- 1 shallot, chopped
- 2 cloves garlic, minced (I added garlic just because I can resist it)
- a sprig of thyme
- 2-3 sprigs of flat-leaf parsley
- a bunch of tarragon
- 3 tablespoons crème fraîche or sour cream
- coarse sea salt and freshly ground black pepper

- 0.5 lb of stir fry beef meat
- 3 tablespoons vegetable oil
- 5 garlic, smashed with skins removed
- 1 -inch ginger, cut into julienne strips
- 4 green onions, cut into 1-inch sections
- 5 tablespoons soy sauce
- 3 tablespoons Shaoxing cooking wine
- 1 tablespoon Mirin
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoon cornstarch dissolved in 1/2 cup water
