- 1/2 cup all-purpose flour
- 1 teaspoon salt

- 1 / teaspoon poultry seasoning with ginger (optional)
- 1/2 cup butter

- 1 cup thinly sliced red onion
- 3 1/2 cups thinly sliced bok choy (about 1/2 pound)

Mushroom Tart

- All-purpose flour for rolling out dough
- 1 disk cream cheese pie dough, thawed (see related recipe at left), or purchased piecrust
- 2 Tbs. unsalted butter
- 1 1/2 lb. mixed fresh mushrooms, such as cremini and stemmed shiitake, halved or quartered
- 1 large shallot, chopped
- 1/2 cup crème fraîche or heavy cream
- 1 tsp. chopped fresh oregano
- Salt and freshly ground pepper, to taste
Orange Roughy

- 2 tablespoons honey mustard (or substitute equal parts spicy brown mustard and honey--also okay to leave out the honey)

- 1/2 to 1 teaspoon cayenne pepper

- 1 2/3 cups freshly squeezed lemon juice
- 2 Tablespoons julienned mint, plus leaves for garnish
- 1 lemon, sliced 1/4-inch thick, plus more for garnish
