Preheat the oven to 375 degrees F
- 2 Tablespoons extra-virgin olive oil
- 1 Tablespoon honey
- 1 pound sweet potatoes, halved or quartered if large
- 1 pound small parsnips, peeled and halved
- 1 bulb fennel, thinly sliced, plus 2 Tablespoons chopped fronds
- 1 large red onion, cut into 8 wedges
- 1/2 cup dried apricots
- 2 to 3 sprigs rosemary, plus 1/2 teaspoon chopped rosemary leaves
- Kosher salt and freshly ground pepper
- 1 small clove garlic, minced
- Grated zest and juice of 1/2 lemon
- 1 skin-on, bone-in turkey breast half (3 1/4 to 4 pounds)
Microwave Risotto

In a 3 quart, microwave safe casserole dish combine butter, garlic and onion
- 3 tablespoons butter
- 1 clove garlic, minced
- 1 onion, chopped
- 1-1/2 cups vegetable broth
- 1 cup uncooked Arborio rice
- 3/4 cup white wine
- 1/4 cup grated Parmesan cheese

- 5 Mint leaves
- 1 oz Fresh lemon juice
- 2 oz Gin
- 1 oz Simple syrup
- Garnish:1 Mint sprig or lemon twist

- 1/3 cup white wine
- 1/3 cup sour cream
- 4 tablespoons horseradish
- Fresh ground pepper
- Paprika for garnish
- Crackers and celery sticks for serving

- 2 containers (5.3 oz each) Yoplait® Greek blended strawberry yogurt
- 1-1/2 cups granulated sugar
- 3/4 cup vegetable or canola oil
- 2 teaspoons vanilla
- 3 eggs
- 2-1/4 cups all-purpose flour
- 1 Tablespoon baking powder
- 1/2 cup strawberry jam
- 1-1/4 cups quartered fresh strawberries
- 2 teaspoons granulated sugar
- Powdered sugar, if desired

- 1 onion chopped
- 1-2 garlic cloves minced
- 2 tsp Mexican chili powder

- 1 tsp cooking oil (I used avocado oil)
