Macaroni and Cheese - Barefoot Contessa

Preheat the oven to 375 degrees F
- Kosher salt
- Vegetable oil
- 1 pound elbow macaroni or cavatappi
- 1 quart milk
- 8 tablespoons (1 stick) unsalted butter, divided
- 1/2 cup all-purpose flour
- 12 ounces Gruyere, grated (4 cups)
- 8 ounces extra-sharp Cheddar, grated (2 cups)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground nutmeg
- 3/4 pound fresh tomatoes (4 small)
- 1-1/2 cups fresh white bread crumbs (5 slices, crusts removed)
Mushroom Ragoût-Gravy

No way around it, gravy is full of fat
- 1 ounce (about 1 cup) dried porcini mushrooms
- 2 Tablespoons extra-virgin olive oil
- 1 medium onion or 2 shallots, chopped
- 4 garlic cloves, minced
- 1 pound mushrooms, cleaned, trimmed, and sliced 1/2 inch thick
- 1 pound wild mushrooms or oyster mushrooms, cleaned, trimmed and sliced thick or torn into pieces
- Salt to taste
- 1 Tablespoon all-purpose flour
- 1/2 cup fruity red wine, such as a Côtes du Rhone
- 2 teaspoons chopped fresh rosemary or 1 teaspoon crumbled dried
- 2 teaspoons chopped fresh sage or thyme leaves
- 1 cup chicken stock or vegetable stock
- Black pepper
Spinach Alfredo Sauce

- 3/4 cup thawed frozen chopped spinach
- 1 pint heavy whipping cream
- 3 Tablespoons cream cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 pinch salt and ground black pepper to taste (optional)
Homemade Orange Julius

- -6 oz can orange juice concentrate, frozen
- -1/4 cup sugar
- -1 cup milk
- -1 cup water
- -1 tsp vanilla

Granny's Salmon Cakes

Adapted from Chef John's version
- 1 (14.75 oz) can red salmon, skin and bones removed, flaked
- 2 eggs
- 1/2 lemon, juiced
- 1 small shallot, minced
- 1 Tablespoon chopped capers
- 1 Tablespoon chopped chives
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 12 saltine crackers (ok to substitute Ritz crackers), crushed by hand
- 3/4 cup (panko) bread crumbs, or as needed
- 1/3 to 1/2 cup vegetable oil

Quick Vegetable Sauté

Easy way to make the vegies the star of the show
- 1 tablespoon extra-virgin olive oil
- 1 small shallot, minced
- 4 cups mixed frozen vegetables, such as corn, carrots and green beans
- 1/2 teaspoon dried dill or tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Creamy Pesto Tortellini

This works nicely as a side dish as is, or with chicken, ham, or sausage as a main dish
- 1 cup heavy cream
- 1/4 cup pesto
- 1/4 cup grated parmesan cheese
- 12 oz tortellini, cooked
- 2 cups steamed broccoli
Bacon, Egg and Cheese Biscuit Muffins

Cook the bacon in a pan or in the oven until it’s almost done
- 1 package biscuit dough (10 biscuits)
- 3 eggs
- 3 tablespoons milk
- 1/3 cup shredded cheddar
- 4 slices bacon (we used turkey bacon and veggie bacon)
