- 1 medium yellow onion, chopped

- 1 1/2 to 2 pounds cooked chicken
- 2 tablespoons olive oil
- 1 large sweet yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs (Progresso Garlic and Herb is great!)
- 1 cup finely grated fresh Romano, or Parmesan cheese (or combination)
- 2 eggs
- 3 tablespoons chicken broth (water may be substituted)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon kosher salt
