Cook the onion in the butter(chicken fat) in a saucepan over low heat for 3 to 4 minutes
- Serves 6 (1/2 cup serving)
- 1 cup very coarsely chopped onion
- 2 tablespoons light butter ( orig. recipe uses chicken fat )
- 2 teaspoons achiote (annatto) paste
- 2 cups water
- 1 cup short-grain white rice (or another rice of your choosing)
- 1/2 teaspoon salt

Preheat the oven to 425 degrees – use convection if you have it
- 2 eggs, whisked well (divided)
- 1 cup of Italian seasoned panko crumbs

- 3 cups of spinach, chopped
- Pinch of crushed red pepper flakes
- 1 clove of garlic, minced

- 2 chicken breasts, cut in half lengthwise
