- 4 Cornish game hens
- salt and pepper to taste
- 1 lemon, quartered
- 4 sprigs fresh rosemary
- 3 tablespoons olive oil
- 24 cloves garlic
- 1/3 cup white wine
- 1/3 cup low-sodium chicken broth
- 4 sprigs fresh rosemary, for garnish
Low-Fat Parmesan Turkey Meatballs

Makes about 20 meatballs
- 1 lb ground turkey (use white and dark meat)
- 1/4 cup fat-free evaporated milk (can use low-fat milk or fat-free milk)
- 1 -2 tablespoon minced fresh garlic
- 1/2-3/4 cup dry breadcrumbs (more if needed or use crushed cracker crumbs)
- 1/4 cup grated parmesan cheese (can use up to 1/2-cup)
- 2 green onions, finely chopped (can use a small yellow onion)
- 1/4 cup finely chopped fresh parsley
- 1 large egg, slightly beaten
- 1/2 teaspoon seasoning salt
- 1/2 teaspoon black pepper (or to taste)
Garlic-Ginger Chicken Wings

Preheat oven to 400 degrees F (200 degrees C)
- For the glaze:
- cooking spray
- 5 pounds chicken wings, separated at joints, tips discarded
- salt and ground black pepper to taste
- 3 tablespoons hot sauce (such as Frank's Red Hot (R))

Chop peanuts, or crush them with the side of a knife, or pulse them in a food processor to chop roughly
- 3/4 cup roasted and shelled peanuts
- 2 tablespoons peanut or neutral oil, like grapeseed or corn
- 1 medium red or white onion, chopped
- 1 tablespoon minced fresh ginger
- 1 tablespoon minced garlic
- 1/2 pound skinless, boneless chicken (about 2 thighs or breasts) cut into chunks

- 6 cups stock or water
- 2 sweet potatoes or yams (about 1 pound), peeled and cut into thick slices
