Slow Cooker Split Pea Soup -8 pts

Layer ingredients in slow cooker in the order given in the ingredient list
- yields 6-8 servings
- 1 (16 oz./450 grams) pkg. dried green or yellow split peas, rinsed
- 1 meaty hambone or 2 ham (pork) hocks (or you could use 2 cups of diced ham, in a pinch)
- 3 carrots, peeled and sliced
- 1/2 cup chopped onion
- 2 ribs of celery plus leaves, chopped
- 1 or 2 cloves of garlic, minced
- 1 bay leaf
- 1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
- 1 tsp. seasoned salt or kosher salt (or to taste)
- 1/2 tsp. fresh pepper
- 1 1/2 quarts hot water
Peach Dipping Sauce

Put peach preserves on the stove over med high heat until melts Pour in rest of ingredients and mix until thorough
- 16 oz. Jar Peach Preserves
- 1/4 cup mustard (yellow or other)
- 1/2 tsp of garlic powder
- 1 Tbs of Brown sugar
- 1 Tbs of Lemon Juice
- Optional: 1 Tbs of Soy Sauce to give Asian flavor

In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon jui...
- Serves 4-6
- 1 cup plain whole milk Greek yogurt
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1/2 teaspoon cumin
- 1/8 teaspoon cinnamon
- 1 teaspoon crushed red pepper flakes (reduce to 1/2 teaspoon if you don't like heat)
- Zest from one lemon
- 2 tablespoons freshly squeezed lemon juice, from one lemon
- 1-3/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 5 garlic cloves, minced
- 2-1/2 pounds boneless skinless chicken thighs, trimmed of any excess fat and cut into large bite-sized pieces
- 1 large red onion, cut into wedges
- Vegetable oil, for greasing the grill

In a large skillet, cook the ground beef over medium-high heat until evenly brown
- 1 pound extra-lean ground beef
- 1 (16 ounce) can refried beans
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 3/4 teaspoon garlic powder
- 12 dry lasagna noodles
- 2 1/2 cups water
- 2 1/2 cups salsa
- 2 cups sour cream
- 3/4 cup chopped green onions
- 1 (2 ounce) can sliced black olives
- 1 cup shredded Pepper Jack cheese

- 1/4 cup egg whites
- 1 cup kale, "massaged" with a dash of sea salt
- 1/2 cup frozen corn
- 1 green onion, diced
- 2 tablespoons fresh salsa
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- salt and pepper

- 2 eggs, beaten
- 1/2 cup soft bread crumbs
- 1/2 cup tomato juice
- 3 Tbsp. chopped flat-leaf parsley
- 1 tsp. dried oregano leaves
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 lb. pork sausage
- 1-1/2 lbs. lean ground beef
- 8 thin slices boiled ham
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Havarti cheese
- 1/4 cup grated Parmesan cheese

- 3 tablespoons and 1-3/4 teaspoons brown sugar
- 3 tablespoons and 1-3/4 teaspoons water
- 2 tablespoons and 2 teaspoons vegetable oil
